We are looking for someone who takes pride in preparing fresh, high-quality sushi and sashimi while providing a great dining experience for our customers. Responsibilities Prepare fresh sushi, sashimi, rolls, nigiri, and other Japanese-style dishes according to Sakana's recipes and standards. Properly handle, cut, and store fresh fish and seafood. Prepare sushi ingredients, sauces, toppings, and garnishes. Maintain a clean, organized, and sanitary sushi station. Follow all food safety, sanitation, and health regulations. Monitor food quality and freshness throughout each shift. Keep the sushi bar stocked and prepared for busy service periods. Work efficiently during high-volume lunch and dinner services. Communicate and work effectively with kitchen staff, servers, and management. Help with daily food preparation, inventory, and cleaning duties as needed. Maintain consistent portion sizes, presentation, and quality. Follow company policies and procedures. Qualifications Previous sushi chef or sushi preparation experience preferred. Knowledge of sushi preparation, fish handling, and food safety. Ability to work in a fast-paced restaurant environment. Strong attention to cleanliness, food quality, and presentation. Reliable, responsible, and punctual. Ability to work well as part of a team. Ability to stand for extended periods and perform physically demanding kitchen duties.
