In this vital role, you will oversee all aspects of sushi preparation, ensuring the highest standards of quality, presentation, and food safety. You will manage a talented team of culinary professionals, coordinate menu planning, and maintain efficient kitchen operations in a fast-paced, fine dining environment. Your leadership will inspire excellence and elevate our guests' dining experience through authentic sushi craftsmanship and innovative culinary techniques. Duties Lead and supervise the sushi kitchen team, fostering a collaborative and motivated work environment. Oversee all food production activities related to sushi, sashimi, and other Japanese delicacies, ensuring consistency and quality. Develop and refine menu offerings, incorporating seasonal ingredients and innovative recipes to delight guests. Manage inventory control and procurement of fresh seafood, rice, condiments, and other ingredients to minimize waste and control costs. Implement strict food safety sanitizing procedures, maintaining compliance with health regulations and industry standards. Coordinate shift management, ensuring smooth operations during busy service hours while maintaining high standards of hospitality. Train staff on food handling techniques, culinary skills, and customer service to enhance team performance. Oversee catering events and banquet services that require specialized sushi presentations or large-scale food production. Monitor kitchen workflow, optimize space utilization, and ensure adherence to food safety protocols at all times. Conduct regular quality checks on dishes before serving to uphold the restaurant's reputation for excellence. Qualifications Proven experience as a Head Sushi Chef or similar leadership role within a fine dining or high-volume Japanese restaurant environment. Extensive culinary experience with a focus on sushi preparation, including knife skills, fish handling, and presentation techniques. Supervising experience in managing kitchen teams effectively while fostering a positive work culture. Strong knowledge of food safety sanitizing procedures, dietary requirements, and allergy management. Experience in inventory management, cost control, and food production planning within the food industry. Familiarity with banquet service, catering operations, and large-scale food service management is highly desirable. Excellent leadership skills with the ability to motivate staff and manage shift schedules efficiently. Knowledge of inventory control systems and restaurant management practices. A passion for hospitality with a keen eye for detail in both culinary craftsmanship and guest service excellence.
