Executive Banquet Sous Chef We are looking for an amazing and talented leader to join the Lana culinary team. Lana is an elevated neighborhood restaurant with California coastal cuisine. The design direction is vintage, seaside, luxury. We are open for dinner service Tuesday through Sunday. We are opening a private event center, The Cove by Lana, 30 feet from the restaurant that will host a variety of private events ranging from birthdays and anniversaries to five course wine dinners and chef driven culinary events. We are looking for an individual that truly understand the culinary arts and take joy in the art of making others feel taken care of. This person will manage all BEO's and prep to ensure that we are ready to execute every function at an extremely high level of efficiency, organization and excellence. In order to be successful at Lana, you have to love working with others in a professional setting. Team-work and compatibility along with elevated levels of food knowledge, food safety and cleanliness are critical components of our operation. Responsibilities:
Work directly with our event coordinator, chef and management to make sure every BEO is processed and ready for execution. Come up with creative menus for wine dinners, spirit tastings and special functions. Assist in the execution of luxury additions like caviar service, live oyster shucking and seafood presentations. Keep the event space kitchen organized and ready for each days event. Wow every guests that books a special function. Prepare consistently excellent dishes—every plate should reflect pride and attention to detail. Work efficiently under pressure—busy nights are a team effort, and every second counts. Maintain a clean, organized, and well-stocked station—because great food starts with great preparation. Communicate and collaborate with the team—timing and coordination are everything. Always strive to improve. Follow food safety and sanitation guidelines—keeping guests and team members safe is non-negotiable.
Qualifications & Skills:
Experience is great, but a strong work ethic and willingness to learn are just as important. Attention to detail and consistency—every dish should meet high standards. Ability to work at a fast pace while staying focused. Strong sense of teamwork and communication. Must be available to work weekends and holidays.
Certification:
Food Handler Card. (Training made available to you directly through the company if you do not have)
