Yugen is a new Japanese sushi destination opening in Silverthorne. It's a nigiri-focused counter inside a one-of-a-kind venue. The 90-seat space pairs serious sushi with craft cocktails, racing simulators, and a gaming lounge. The food stands on its own. Our ambition is for guests to come for the energy and leave talking about the fish.

We are nigiri-focused by design:

no rolls, no composed plates. The discipline is the point. Every piece has to earn its spot. The role We're hiring a part-time Sushi Chef (25-30 hours/week) to work alongside our Head Sushi Chef at our 8-seat counter. You'll execute the nigiri program to a high standard, handle prep and fish breakdown, and be a professional, welcoming presence for the guests sitting directly in front of you. This is a hands-on role for someone who loves the craft and wants to grow within a serious program. You'll be responsible for Preparing and serving nigiri to the standards set by the Head Sushi Chef Fish breakdown, portioning, and daily prep Preparing and holding sushi rice to spec Receiving and properly storing fish and ingredients Maintaining cleanliness, prep workflow, and food safety standards Working the counter with confidence: guests sit right in front of you What we're looking for 2+ years of sushi / Japanese cuisine experience Solid nigiri fundamentals: knife work, fish handling, rice, consistent single-bite composition Respect for the craft and willingness to learn and execute someone else's standards Reliability, especially on evenings and weekends Calm, professional presence behind the counter Conversational English required Bonus Japanese language skills Sake and shochu knowledge Personal interest in any of our venue's themes: automotive, professional racing (F1, IMSA, WEC, NASCAR), sim racing, video games, Pokémon,
