Winston Hospitality is currently seeking an accomplished, passionate, and entrepreneurial Executive Chef to lead the culinary program for FYR Prime, a brand-new fine dining steakhouse opening within Ho-Chunk Gaming Beloit, a major new casino and hotel destination in Beloit, Wisconsin. This is an exciting opportunity for a chef who wants to build something from the ground up. The Executive Chef will play a key role in developing FYR Prime's culinary identity, creating the menu, establishing kitchen standards, building a talented culinary team, and setting the tone for an exceptional fine dining guest experience from day one. FYR Prime is a fine dining, high-check-average steakhouse concept. We are looking for a chef with real fine dining leadership experience, not general restaurant kitchen experience alone, who understands the precision, sourcing, and guest expectations that come with that level of dining. Because FYR Prime operates within a casino property, the ideal candidate will be comfortable with the pace and guest mix of a high-volume, gaming-adjacent hospitality environment, including VIP dining occasions. Prior experience in a casino or resort culinary environment is a strong plus. Key Responsibilities
Develop and execute the restaurant's fine dining culinary concept and menu.
Create menus that reflect a distinctive point of view while appealing to the local market.
Establish recipes, preparation standards, plating specifications, and quality-control procedures.
Lead all aspects of the kitchen operation before and after opening.
Hire, train, and develop the culinary team.
Create a positive, professional, and high-performing kitchen culture.
Establish kitchen organization, systems, prep procedures, and service standards.
Manage food and labor costs while maintaining exceptional quality.
Oversee purchasing, inventory, receiving, storage, and vendor relationships.
Maintain the highest standards of food quality, sanitation, safety, and consistency.
Work collaboratively with the front-of-house and hospitality leadership teams.
Monitor guest feedback and continuously improve the culinary experience.
Lead by example during service and remain actively engaged in the operation.
Ensure compliance with all applicable health department and food-safety requirements.
The ideal candidate will have:
Proven experience as an Executive Chef, Chef de Cuisine, or comparable culinary leadership role in a fine dining restaurant, ideally a steakhouse or similar high-check-average concept.
Experience opening a new restaurant is strongly preferred.
Experience in a casino, resort, or other gaming-adjacent hospitality environment is a strong plus.
Demonstrated ability to train, motivate, and retain a culinary team.
Strong understanding of food cost, labor cost, purchasing, and inventory management.
Excellent organizational and communication skills.
A hands-on leadership style and strong presence in the kitchen.
High standards for food quality, hospitality, cleanliness, and consistency.
The ability to thrive in a fast-paced, start-up environment.
