POSITION SUMMARY
The Line Cook/Prep Cook is responsible for prepping ingredients, preparing, cooking, and plating menu items in accordance with the restaurant's recipes and specifications. Line Cooks keep their work area clean, organized, and stocked, throughout their shift.
DUTIES AND RESPONSIBILITIES
Understand completely all company policies, procedures, standards, specifications, guidelines, and training programs. Must arrive on time, adhered to dress code, and ready to work for each shift. Set up all ingredients for all menu items according to station prior to the start of service Prepare high-quality menu items safely and efficiently, following all recipe guidelines. Carefully review every ticket for special requests and dietary modifications to ensure each order is made exactly as requested. Deliver finished items to the pass at their ideal temperature and presentation for immediate service. Apply FIFO (First In, First Out) standards by properly rotating ingredients, using sanitized containers, and dating all prepared items. Monitor prep levels, replenish ingredients, and maintain organized backup stock to prevent 86s during service. Coordinate timing and maintain open communication with neighboring line stations to ensure synchronized ticket times. Pack, seal, label, and date all prep in clean containers, storing them properly in the walk-in at shift end. Demonstrate an eagerness to cross-train across various stations and master new recipes. Maintain a clean, sanitized, and organized workstation in compliance with health and safety standards at all times. Collaborate closely with fellow back-of-house team members, stepping in to support adjacent stations during peak periods. Manage high-volume ticket loads calmly and efficiently during peak lunch and dinner services. Execute all daily opening prep, restock, and closing checklists for the assigned station. Promptly report low inventory, product shortages, and malfunctioning equipment to the kitchen management team. Adhere strictly to all local, state, and federal food safety and sanitation codes. Attend all scheduled staff meetings, menu rollouts, and mandatory training sessions.
MINIMUM QUALIFICATIONS AND SKILLS
Two (2) + years of experience as a line cook in a high-volume, fast-paced restaurant or quick-service environment, with hands-on experience preparing authentic or modern Mexican cuisine. Solid understanding of core Mexican ingredients, scratch cooking methods, kitchen equipment, and traditional culinary techniques. Demonstrated ability to scale, weigh, and precisely follow standardized recipes for consistent flavor profiles and presentation. Advanced knife skills and strong proficiency across essential stations, including sauté, fry, flat-top, and steam tables. Highly collaborative team player dedicated to fostering a supportive, efficient back-of-house culture. Dependable, punctual, and accountable, with a consistent track record of reliable attendance. Strong multitasker capable of prioritizing tickets, taking direction well, and adapting quickly under pressure. Clear verbal and written English communication skills; bilingual English/Spanish proficiency is a plus. Self-motivated with a strong work ethic, professional attitude, and pride in food quality.
PHYSICAL REQUIREMENTS
Must be able to work in a standing position for long periods of time, a minimum of 8 hours per day, in hot environment. Must have strength and ability to frequently and repeatedly reach, bend and stoop. Must be able to lift up to 50 pounds without difficulty. Stamina to work 40 hours per week; must be able to work flexible hours and fill in for staff if emergencies arise.
MINIMUM REQUIREMENTS
Must be over 18 years of age. Proof of eligibility to work in the US. Must pass casino/gaming background check.
