Position Summary We are seeking an experienced and detail-oriented Sushi Cook to join our kitchen team. This position is responsible for preparing sushi, sashimi, rolls, seafood, and related ingredients while maintaining consistent quality, presentation, sanitation, and food-safety standards. The ideal candidate has previous professional sushi preparation experience, strong knife skills, and experience safely handling raw fish and seafood in a commercial restaurant environment. Responsibilities Prepare sushi, sashimi, rolls, and other assigned menu items according to restaurant recipes and presentation standards. Cut, portion, slice, and prepare fish and seafood according to established specifications. Prepare sushi rice, vegetables, garnishes, sauces, and other sushi-station ingredients. Maintain consistent portion size, appearance, quality, and presentation. Inspect fish, seafood, and other ingredients for freshness and quality before preparation. Properly receive, label, date, rotate, and store fish, seafood, and other ingredients. Maintain appropriate temperature controls for raw and prepared products. Follow applicable procedures for handling raw fish and preventing cross-contamination. Set up, stock, organize, and maintain the sushi station before and throughout service. Monitor inventory and communicate product or preparation needs to kitchen leadership. Minimize unnecessary food waste and follow restaurant portion-control standards. Maintain knives and sushi-station equipment in clean and safe working condition. Clean and sanitize cutting boards, knives, equipment, food-contact surfaces, and assigned work areas. Follow restaurant food-safety, sanitation, allergen, personal-hygiene, and workplace-safety procedures. Assist with other kitchen preparation and production duties as assigned. Experience & Qualifications Previous professional sushi preparation experience strongly preferred. Previous experience preparing sushi, sashimi, rolls, and raw fish/seafood in a commercial restaurant environment is strongly preferred. Previous Japanese restaurant, sushi restaurant, or other Asian restaurant experience is a strong plus. Strong professional knife skills preferred. Experience portioning and slicing fish accurately and consistently preferred. Knowledge of proper raw-fish and seafood handling, storage, sanitation, and cross-contamination prevention. Understanding of food temperature control, labeling, dating, and FIFO procedures. Ability to follow standardized recipes, portion specifications, and presentation standards. Strong attention to detail and product quality. Ability to work efficiently while maintaining accuracy and presentation standards during high-volume service. Strong teamwork and work-related communication skills. Reliable attendance and punctuality. Essential Functions & Physical Requirements The employee must be able to perform the essential functions of this position, with or without reasonable accommodation , including: Stand and work at the sushi station for extended periods, including for the majority of a scheduled shift. Perform frequent and repetitive knife, hand, wrist, and arm movements associated with sushi and seafood preparation. Frequently bend, reach, twist, push, and pull while preparing and retrieving ingredients. Safely and precisely handle sharp knives and other applicable sushi-preparation equipment. Work with raw fish, seafood, refrigerated products, and other restaurant ingredients throughout the shift. Work safely around wet or slippery surfaces, commercial kitchen equipment, and other normal restaurant conditions. Lift, carry, and move food containers, ingredients, seafood products, and restaurant supplies consistent with the actual requirements of the assigned station. Effectively communicate work-related information with kitchen employees and managers. Maintain accuracy, sanitation, organization, and attention to detail while performing repetitive food-preparation tasks. Work efficiently during high-volume production and service periods. Compensation & Benefits This position pays $18.00-$22.00 per hour , depending on relevant sushi experience, knife skills, and qualifications. Employees are eligible for paid sick leave and other benefits as required by applicable law. Pay:
