About the Role We are hiring a hands-on General Manager to lead two distinct hospitality concepts under one roof in the heart of
Key Largo:
Vicky Bakery (a beloved daytime bakery and café) and Bar Victor (a Cuban cocktail bar and lounge). This is a rare opportunity to own the full operation of a business that runs from the morning coffee-and-pastry rush all the way through the evening cocktail service. You will be the single point of accountability for both concepts: the numbers, the team, the guest experience, and the day-to-day execution. What You Will Own Full-Operation Leadership Serve as the top on-site leader for both Vicky Bakery and Bar Victor, accountable for the performance of each concept Set daily priorities across two very different dayparts (bakery mornings and afternoons, bar evenings), and keep both running to standard Uphold brand standards, cleanliness, and guest experience from open to close Bakery Management Oversee bakery production, café service, and the front counter, ensuring product quality, freshness, and consistency Manage baking and prep schedules in coordination with kitchen and production staff Control ingredient ordering, vendor relationships, waste, and food cost Maintain full food safety and health-code compliance Bar Management Run the Bar Victor beverage program day to day: cocktail execution, service standards, and guest experience Manage bar inventory, ordering, pour cost, and vendor relationships Ensure responsible alcohol service and full compliance with Florida beverage laws Keep the bar staffed, trained, and delivering a consistent guest experience every shift People Leadership Recruit, hire, onboard, schedule, and develop staff across both concepts (baristas, counter staff, bartenders, servers, and support roles) Build and lead a team that shows up, takes pride in the work, and delivers hospitality Handle coaching, performance management, and HR documentation in line with company policy Financial and Administrative Own the P&L for both concepts: revenue, labor cost, cost of goods, and operating expenses Manage labor to budget through smart scheduling across both dayparts Review daily sales, run reporting, handle cash controls, and hit financial targets Partner with ownership and advisors on budgeting, forecasting, and growth initiatives Community and Growth Represent both brands within the Key Largo and Upper Keys community Support local marketing, events, and partnerships that drive traffic across both concepts What We Are Looking For Required 3+ years of restaurant, bar, café, or hospitality management experience (General Manager or Assistant GM level preferred) Proven ability to manage a full
P&L:
labor, cost of goods, and operating expenses Direct experience hiring, scheduling, training, and leading a team Strong knowledge of food safety and responsible alcohol service Comfort working across multiple dayparts and switching between operations (bakery service and bar service) Lives in Key Largo or the Upper Keys, or is willing to reliably commute (this is an in-person role, local candidates only) Availability for a full-time schedule that includes weekends and holidays Preferred (a plus, not required) Experience running or overseeing more than one concept, department, or revenue stream at once Bar or beverage program experience (cocktails, inventory, pour cost) Bakery, café, coffee, or quick-service experience Bilingual (English and Spanish) Florida Food Manager Certification (ServSafe) and alcohol seller-server certification (or willingness to obtain) POS and scheduling software proficiency Schedule and Location Full-time, in person at our Key Largo location Schedule spans daytime bakery operations through evening bar service, with weekend and holiday availability required Local candidates only (Key Largo or nearby Upper Keys) How to Apply Apply directly through Indeed with your resume.
