Weekend availability required. 4+ years of experience in high volume kitchens preferred. Good attitude and the ability to work well with others is key. CHEF DE CUISINE JOB DESCRIPTION
Reports directly to: General Manager, Culinary Director Job Overview The Chef de Cuisine (CDC) runs an efficient and professional culinary team. The Chef de Cuisine oversees all areas of the kitchen - menu development, food preparation, food safety, kitchen safety, production & inventory, employing & disciplining staff, assessing staff performance, and ensuring cleanliness. The CDC's primary responsibility is to prepare delicious, fresh, attractive, and consistent dishes. Other responsibilities include staging and training new culinary staff; building a strong team; deploying labor, purchasing, and equipment resources responsibly; and following all company-wide standards and procedures. The CDC is an administrator as well as a culinarian—guiding team objectives while remaining responsive to all issues that arise within the culinary department.
Experience/Knowledge:
Professional cooking and knife-handling skills. Adept at using a wide range of kitchen equipment Have at least 4 years cooking experience in an upscale or corporate environment Compliant with all required health department and safety certifications, including currently valid ServSafe certification and Hepatitis A vaccination Ability to read and understand kitchen terminology We are a group of St. Louis restaurants with respect for people, food, drink, and our beloved city.
