Santa Rosa, CA Job Details Part-time | Full-time From $23 an hour 8 hours ago Qualifications Kitchen health and safety standards Fermentation (food) Pizza experience Italian cuisine Oven and range use Food Handler Certification Full Job Description Job Summary Join our founding kitchen team at Capriciano Osteria as a Pizza Cook and help define the standard of our firewood oven pizza program from day one! Opening May 2025, Capriciano is an upscale Italian seafood osteria in Santa Rosa, CA, where our wood-fired pizza program is central to the menu and guest experience. In this role, you will bring skill, speed, and passion to every pie that leaves our oven. If you understand the craft of dough, fire, and flavor and want to be part of something exceptional from the very beginning, we want to meet you. Duties Operate and manage our firewood pizza oven with skill and safety throughout service Stretch, top, and launch pizzas to recipe specifications — consistent size, thickness, and topping distribution Monitor oven temperature and fire behavior, adjusting technique to achieve optimal bake on every pizza Prepare and maintain daily pizza dough, sauce, and topping components Execute our current pizza menu — Margherita, Funghi & Salsicce, and Pizza Capriciano — with speed and precision Coordinate timing with the broader kitchen team to ensure pizzas arrive at the table perfectly Maintain cleanliness and organization of the pizza station throughout service Follow all food safety and sanitation standards Experience Minimum 2 years of wood-fired or high-heat pizza experience (Neapolitan, Roman, or artisan style preferred) Confidence and speed working the oven during high-volume service Understanding of dough hydration, fermentation, and how fire behavior affects the bake Strong team communication and coordination skills Food Handler Certification (or ability to obtain within 30 days) Availability for evening and weekend service
