Pastry Production Manager Our client is a local bakery and café devoted to the pleasure of preparing and sharing ingredient-driven breads, pastries, and breakfast and lunch fare. As a family-owned bakery in a major Southeastern U.S. city, they take pride in serving their local community with exceptional quality, thoughtful hospitality, and homemade products. We are seeking a Pastry Production Manager to lead the pastry department. This is a hands-on leadership role for an experienced baker who thrives in a fast-paced artisan bakery environment and enjoys mentoring others while maintaining the highest standards of quality and consistency. Key Responsibilities Production Management Lead and manage a team of 4-7 pastry employees, providing daily direction, coaching, and support. Hire, train, and develop team members into skilled bakers and strong contributors. Plan and oversee daily production schedules and quantities based on sales trends, seasonal demand, holidays, and special events. Develop and execute production plans for holidays, seasonal offerings, and other high-volume periods by forecasting demand, coordinating staffing and prep schedules, and ensuring the team is prepared to meet increased production while maintaining quality and consistency. Ensure production goals are met while maintaining product quality, efficiency, and food safety standards. Hands-On Pastry Production Participate in daily pastry production, with the majority of your time spent working alongside the team. Learn, master, and consistently execute all house recipes to established standards. Train and coach staff on recipes, techniques, and quality expectations. Monitor finished products to ensure consistency, freshness, and presentation. Inventory & Organization Manage pastry inventory to ensure proper stock levels, freshness, and product rotation. Maintain organized systems for ingredients, prep items, and finished products. Order ingredients from designated vendors and communicate inventory needs with the management team. Minimize waste through accurate forecasting and inventory management. Leadership Lead by example through professionalism, accountability, communication, and a positive attitude. Foster a collaborative, respectful, and motivated team culture. Identify opportunities to improve systems, workflows, and production efficiency. Remain calm and solutions-oriented in a fast-paced environment. Collaborate with ownership and the management team to continually improve operations, seasonal offerings, and product quality. Qualifications The ideal candidate will have: Previous professional pastry or baking management experience, preferably in an artisan bakery. A passion for hands-on leadership and a willingness to work approximately 50 hours per week. Excellent organizational and time management skills. Strong attention to detail and the ability to manage recipes, production schedules, inventory, and documentation. Experience mentoring, coaching, and developing employees. A strong sense of ownership, accountability, and pride in your work. A commitment to producing exceptional products with consistency and care. Excellent written and verbal communication skills.
