Reporting directly to the Senior Manager of Event Operations, the Catering Production Manager is responsible for the operational and production aspects of each Catering function. The Catering Production Manger will manage each assigned function, from production to execution as well as on-site service ensuring a quality and profitable event while maintaining positive guest and interdepartmental relationships consistent with the DBC brand at all ANI facilities.
ESSENTIAL FUNCTIONS
Exemplifies a positive attitude. Assists the Senior Manager of Event Operations and Catering Management Team with the timely recruitment, screening and training of new staff; assists with the ongoing training and development of current staff. Responsible for timely and thorough performance appraisals/review of all on-call members. Staff events with the highest caliber employees ensuring a maximum level of quality service to all clients and guests. Serves as acting attendance supervisor who will compile all event staffing needs, contact and schedule supervisors and on-call staff, based on the event needs. They will also work through the week to maintain set staffing levels and maintain partnerships with outside temporary staffing vendors. Responsible for scheduling must remain in constant contact with all on-call employees. This will include maintaining current email distribution lists and contact logs. Communicates all information as it pertains to schedules, uniform requirements, role-specific event documents. Responsible for communication of all DBC and ANI news and announcements. These avenues will also be maintained in preparation for emergency situations and preparedness. Consistently seek opportunities to train Catering staff before, during and post event. Must effectively delegate and manage time involving the daily operations of Catering & Special Events Department. Acts on behalf of the Special Events Sales Team during times of impromptu Site Visits; thus, remains knowledgeable about Special Event venue spaces and accommodating services. Responsible for the completion of corresponding documents regarding menu selection, equipment usage and food placement. Complete and route Service Reports documenting each Special Event assigned. Monitor and enforce service standards and expectations. Participates in necessary revisions and updates as Special Events change and evolve. Involved in career and attendance tracking for all on-call employees. Handles attendance and reacts to periods of inactivity. Responsible for maintaining a quality presentation for all events; including buffet stations, dining tables, reception stations, passed hors d'oeuvres etc. Will assist in building and venue upkeep and beautification. This includes but is not limited to caring for planters at Catering maintained facilities. Recognize potential safety hazards as well as aesthetic problems due to construction and take appropriate action to amend issues. Handle vendor load-in and load-out on event day/night while communicating with public customer. Responsible for making sure the space is returned to camera ready standards for next business day. Responsible for traffic flow and overall event crowd control. Take initiative in creating and implementing policies and procedures which enhance department efficiency and profitability as well as develop and maintain communication and relations with all other DBC and ANI departments. Responsible for the inventory and purchase of all in-house linens. A quarterly inventory must be conducted and submitted to the Senior Manager of Event Operations. Linens are to be kept up to par, ordering strategically to match approved budget. Maintains the upkeep and cleanliness of Audubon owned golf carts and vehicles. Responsible for ordering "disposables/consumables" for events as needed. This will include conducting comparison and cost analysis while striving for the most environmentally friendly products, while maintaining department aesthetics and budget parameters. Assists with creating and successfully achieving all departmental and fiscal goals. Must actively participate in on-going developmental training, staying abreast with changing and updated event trends. Track, maintain and enforce LRV trainings and certifications. Maintain inventory of supplies offered in Special Event Bridal Kits; ensuring all kits are stocked in preparation for each event. Understands and enforces the standards for safety, emergency actions, and security of DBC and Audubon Nature Institute among Catering Staff as well as Temporary Workers.
REQUIREMENTS
High School diploma or equivalent. Prior bartending or banquet bar experience preferred but not required. Louisiana Responsible Vendor Permit. ServSafe Manager Certification (can obtain while employed). Must have the ability to use mobile devices, phone, bar tools and golf cart.

Working long hours between breaks or meals required. Ability to work under and handle stress in an appropriate manner required. May be exposed to high, medium, or low noise intensity. Constant contact with co-workers required. Affinity for animals preferred. Exposure to fluctuations in temperatures may be required. Exposure to outdoor conditions may be required.
