Job Description
- Position location - Wexford, PA
- Ensure daily production of the highest quality breads and pastries possible delivered on time and in sufficient quantity to meet customer demand.
Responsibilities:
- Ensure that a clean, safe, orderly baking environment is maintained at all times.
- Supervise and facilitate the smooth and timely production of all daily bread and sweets. Actively participate in all stages of bakery production.
- Direct the efforts of all production personnel to accomplish the day's planned production and clean-up. Adjust personnel assignments for large or small production or over-/under-staffing.
- Check hold order sheet and talk with the other managers to ensure that the day's planned production will meet our customers' needs. Take corrective action as necessary (i.e. schedule additional production or adjust current production to accommodate).
- Ensure that all bakery production is properly recorded and totaled at the end of daily production on the Production/Sales Log to and including the 'Retail Available' column.
- Coordinate ordering with Bakery Lead for all bakery ingredients and manage inventory. Maintain and rotate adequate supply of ingredients so that temporary supplier stock-outs or increased customer demand is covered. Ensure organization of stockroom and cooler so employees can easily find ingredients and supplies.
- Oversee all bakery equipment cleaning, maintenance and repair. This includes training and assigning personnel to proper cleaning/maintenance procedures.
- Ensure that the daily transfer is set up properly and that it leaves on time.
- Along with the General Manager, train all new personnel on proper production and cleaning procedures.
- Plan weekly bakery production for Wexford and Farmers' markets when needed, based on previous weeks' sales.
Quality Control:
- Check all batches as they go out for display to ensure the quality of all baked goods produced. Allow only top quality products to be offered for sale. Pull any substandard product.
- Adjust numbers and note reason on production/sales log to reflect any product pulled for lack of quality.
- Ensure all deli production is kept within proper dates and quality is up to standards.
Requirements:
- 2 or more years restaurant experience, bakery background (preferred).
- Ability to work flexible shifts.
- Experience working in a fast paced environment.
- Self-starter, works independently and as part of a team.
- Enthusiasm, energy and positive attitude with a desire to help develop a team.
- Strong organizational and time management skills.
