Role:
The Store and Bakery Production Manager is responsible for overseeing our Franklin Bagel Shop, and the entire production process for three stores, ensuring that all goods meet quality standards and are produced efficiently and safely. This role involves managing a retail bagel shop as well as production schedules, coordinating with suppliers, and leading a team of bakers and production staff to meet daily and weekly production targets. The manager will implement and maintain food safety and hygiene standards in compliance with regulatory requirements for both the bagel shop and the adjoining bake shop. Additionally, the role requires continuous process improvement to optimize production workflows and reduce waste. Ultimately, the Store and Bakery Production Manager ensures the store and the bakery operate smoothly, delivering high-quality products that satisfy customer expectations while maintaining cost-effectiveness.
Minimum Qualifications:
Bachelor's degree in Food Science, Culinary Arts, Business Management, or a related field preferred. Minimum of 3 years of experience in bakery production or food manufacturing management. Strong knowledge of food safety standards and regulatory compliance. Proven leadership skills with experience managing production teams. Excellent organizational and communication skills.
Preferred Qualifications:
Certification in Food Safety (e.g., ServSafe or equivalent). Experience with lean manufacturing or continuous improvement methodologies. Familiarity with bakery production software and inventory management systems. Previous experience in a managerial role within a large-scale bakery or food production facility. Knowledge of supply chain and procurement processes related to bakery ingredients.
Responsibilities:
Plan, organize, and supervise daily bakery production activities to meet quality and quantity targets. Manage and train store and production staff, fostering a collaborative and efficient work environment. Ensure compliance with food safety regulations and company hygiene standards throughout the production process. Coordinate with procurement to maintain adequate inventory of raw materials and supplies. Monitor production metrics and implement process improvements to enhance productivity and reduce waste. Collaborate with quality assurance teams to address any product quality issues promptly. Prepare production reports and communicate progress and challenges to senior management.
