Job Summary:
The Kitchen Manager oversees all food service operations within a mobile kitchen unit operating under strict United States Forest Service (USFS) National Mobile Food Service Contracts. This role requires managing high-volume meal production (up to 2,000 meals per service) for wildland firefighters and incident personnel. The manager ensures absolute compliance with USFS specifications, strict nutritional guidelines, rigorous sanitation standards, and tight operational timelines under high-stress, remote field conditions.Duties/Responsibilities:
- Assists the Food Services Manager with menu development, ensuring cost control measures are observed.
- Maintain comprehensive knowledge of the current USFS National Mobile Food Service Contract. Ensure every meal meets exact weight, caloric, variety, and packaging requirements specified in the contract.
- Direct the preparation and serving of hot breakfasts, hot dinners, and shift lunches. Ensure proper food portions, quality, and appearance while adapting to fluid headcounts.
- Manage ordering, receiving, and inventory rotation (FIFO) of all inventory items.
- Ensures that kitchen staff maintains a high standard of cooking quality by knowing necessary lead times for meal preparation, appropriately timing meal service, adhering to applicable health standards and codes, and maintaining food properly.
- Supervise, schedule, and train kitchen staff, cooks, and utilities personnel. Enforce strict adherence to safety, hygiene, and conduct policies.
- Coordinates all portions of meals. Ensures that quantities are maintained according to contract.
- Oversees and operates mixers, ovens, choppers, shredders, steamers, grills, grinders, steam kettles, fry kettles, and other food equipment.
- Coordinates set up and proper running and maintenance of lights, refrigerator units, water pumps, generators, etc.
- Ensures compliance with all Federal Contract Requirements pertaining to the Job Site.
- Ensures that Job Site/Mobilization is maintained in a clean and orderly fashion and that staff is appropriately supervised.
- Makes every effort to resolve issues by consulting with concerned parties, whether governmental agents or employees.
Required Education, Certifications, Licenses, and Experience:
- ServSafe Food Protection Manager certification or equivalent ANSI National Accreditation Board and the Conference of Food Protection Certificate
- 3-4 years experience working in a fast paced food service environment.
- 3-4 years experience in a supervisor or managerial position.
- Ready for immediate dispatch and comfortable living in remote fire camp environments for weeks at a time.
Preferred Education, Certifications, Licenses, and Experience:
- Experience working in a field / non-standard environment.

Employees may be exposed to extreme cold or hot weather conditions, fumes, or airborne particles, toxic or caustic chemicals, and loud noise.Physical Requirements:
Employees may be required to remain in a stationary position, stand, push, pull, climb, kneel, crawl, balance, squat, bend, and reach. Employees may be also required to use gear to move items around, including, but not limited to, carts and dollies. Employees may also be occasionally required to lift and/or move up to 49 pounds.
