This role is perfect for someone who understands the craft of grilling over charcoal, respects traditional Japanese techniques, and enjoys working in a fast-paced, team-driven environment. Responsibilities Prepare and grill yakitori skewers (chicken, beef, pork, seafood, vegetables, etc.) using traditional methods Maintain proper control of grill heat and timing to ensure consistency and quality Handle butchering, skewering, and prep work with accuracy Ensure freshness, proper storage, and rotation of ingredients Keep grill station clean, organized, and compliant with food safety standards Work closely with the kitchen team during service to deliver smooth operations Assist with inventory, ordering, and prep as needed Requirements Previous experience working as a grill chef, yakitori chef, or equivalent role Strong understanding of charcoal grilling techniques (binchotan experience is a plus) Ability to work efficiently under high-volume conditions Reliable, punctual, and strong teamwork skills Attention to detail and pride in presentation Ability to stand for extended periods Weekend and evening availability required What We Offer Hourly pay + tips Staff meals Opportunities for growth within an expanding restaurant A collaborative and supportive kitchen environment
