Summary:
The Dietary Manager s upervises the operation of Dietary Services of the facility.
Qualifications:
Education:
High school diploma or equivalent
Licenses/Certification :
Licensed or certified as a nutrition professional by the State in which the services are performed. CDM (Certified Dietary Manager) or CFM (Certified Food Manager)
Experience:
Two years of experience in Dietary operations, one of which was in a long-term care environment.
Job Functions:
Provides training, direction, and guidance for the dietary staff. Participates in the hiring, disciplining and evaluation of dietary employees. Schedules and supervises the cleaning and maintenance of equipment. Ensures that adequate stocks of appropriate food are available and maintains an accurate inventory. Participates in facility "Performance Improvement Program." Orders supplies, checks shipments, and conducts inventories. Monitors supply usage for appropriateness and efficiency. Prepares work schedules and maintains adequate staffing. Participates in the predicting, planning, monitoring and evaluating of cost programs as assigned. Responsible for the completion of dietary documentation, patient histories, and food preferences. Works closely with Nursing staff to ensure that proper dietary needs are being recorded, addressed, and delivered. Performs other tasks as assigned.
Knowledge/Skills/Abilities:
Skilled in directing and motivating the workforce. Ability to communicate effectively with residents and their family members, and at all levels of the organization. Knowledge of infection control techniques. Knowledge of commercial food service equipment operation.
