Full-time Education Required:
High School Diploma or GED. License, Certification and/or
Registration:
ServSafe Food Safety Certification Experience:
Food preparation, inventory and stocking experience in a high volume setting preferred.
Additional Skills/Abilities:
Excellent communication and customer service skills required. Must have strong organizational skills with the ability to solve problems independently. Must be knowledgeable of and able to follow the standards of federal, state and regulatory agencies and for sanitation, food preparation and handling. Must have knowledge of cooking methods and procedures, safe food handling techniques and all kitchen equipment. Must be able to follow directions of written recipes. Must be able to properly identify patients/residents and maintain confidentiality.
Key Responsibilities and Essential Functions:
Ensures that the cooks unit is set up for preparing current days entrees and hot items, checks all food items on the carts with the production and tally sheets and communicates with the main storeroom for items that are missing. Checks the following days menus for availability an assures the needed supplies are available. Ensures all deliveries in the Kitchen are properly received and stored with proper rotation. Ensures that the quality of all food items produced is preserved, consistently following the standardized recipes and diagrams. Follows guidelines set forth by the Department of Public Health/CMS to ensure food quality and safety, checks and documents holding temperatures of hot food to ensure food safety, and follows proper basic food preparation techniques. Ensures food items are prepared in sufficient quantity to cover service requirements. Maintains cleanliness of work area, ensuring cleaning list observed. Maintain over producing and waste. Log all temperatures and any food items being prepared. Ensure cleaning assignments including dishwashing is completed daily and signed off on. Teamwork is displayed daily. Restock items in pantry areas. Exhibits proper sanitation skills, handling food properly and washing hands as instructed. Serves patients/residents courteously and effectively. Follows therapeutic diet plan. Other duties as assigned.
