Job Overview We are seeking a dynamic and highly motivated Certified Dietary Manager to lead our food service operations for our campus. Develops and maintains standard for purchasing, storing and preparation of food. 2. Establishes and maintains procedures to meet safety and sanitization standards in order to assure compliance with governmental regulations. 3. With the administrator establishes departmental goals and objectives. 4. Plans and administers departmental budget including staffing levels. 5. Plans and directs regular schedule of work activities and assignments to assure effective food service. 6. With the consultant dietitian, monitors nutritional status of residents using regular assessments, progress notes and dietary care planning. 7. Prepares timely reports as may be requested/required by federal, state, community agencies, etc. 8. Develops and conducts in conjunction with the consultant dietitian, regular in-service education to increase staff skills and knowledge. 9. Adjusts recipes/menus to meet nutritional requirements of residents with assistance of the consultant dietitian. 10. Assures correct procedures in preparation of food and inspects quantity, quality, temperature and appearance of food prior to serving. 11. Evaluates resident acceptance of menu items and makes substitutions available as requested or required. 12. Establishes and maintains records/receipts regarding dietary operations. 13. With the consultant dietitian, develops, establishes and maintains nutritional care plans for residents. 14. Meets with the DON on a weekly basis to discuss nutritional needs of residents. 15. Does actual cooking as appropriate and necessary. 16. Attends weekly Leadership meetings, MDR, and scheduled care plan meetings with residents and families 17. Other duties as appropriately assigned. Qualifications 1. Successful completion of approved state food service supervisor course is required. 2. Management/supervisory experience are necessary. 3. Experience in a long-term care setting is preferred. 4. Experience in quantity cooking is necessary. 5. Highly developed communication and interpersonal skills are needed. 6. Functional literacy in English is required. 7. Vision must be adequate to read menus, etc. 8. Excellent leadership skills with the ability to motivate teams, manage budgets, and oversee food production operations effectively.
