This is a leadership-level position requiring extensive knowledge of the Child and Adult Care Food Program (CACFP), USDA meal requirements, and Head Start/Early Head Start nutrition standards . The Director of Nutrition will be responsible for ensuring that menus, recipes, portions, dietary accommodations, documentation, and foodservice practices meet all applicable nutritional and program requirements. Key Responsibilities Develop, review, approve, and maintain nutritionally appropriate menus that meet CACFP, USDA, Head Start/Early Head Start, and applicable state requirements . Ensure menus meet required meal patterns, portion sizes, age-specific requirements, food components, and nutritional standards . Manage nutritional and dietary requirements for children and clients with food allergies, intolerances, medical conditions, texture modifications, and other special dietary needs . Review and implement medical dietary statements and physician/provider-prescribed meal modifications as required. Develop appropriate substitutions while maintaining CACFP compliance and nutritional integrity. Maintain accurate menu documentation, standardized recipes, nutrient information, production records, substitutions, special-diet records, and supporting documentation . Work closely with culinary and operations teams to ensure approved menus are properly executed at the kitchen and site level. Provide nutritional guidance and training to foodservice managers, cooks, site personnel, and other employees. Assist with CACFP reviews, Head Start monitoring, audits, corrective-action plans, and regulatory inspections . Monitor regulatory changes and ensure our programs remain compliant with current requirements. Evaluate menus for nutrition, variety, cultural appropriateness, food quality, cost effectiveness, and operational feasibility. Serve as the organization's primary resource for questions involving nutrition, CACFP meal compliance, special diets, and dietary accommodations. Collaborate with client leadership, healthcare professionals, families, and program administrators when necessary to address individual dietary needs. Qualifications Candidates should possess a bachelor's degree or higher in Nutrition, Dietetics, Food and Nutrition, Public Health Nutrition, or a closely related field from an accredited institution. Registered Dietitian Nutritionist (RDN/RD) credentials are strongly preferred , particularly for a position that will have responsibility for clinical or medically prescribed dietary modifications. The successful candidate should also have: Significant professional experience with CACFP and its meal-pattern, documentation, and reimbursement requirements. Strong working knowledge of Head Start/Early Head Start nutrition requirements and Performance Standards . Experience developing and approving menus for large-scale or institutional foodservice programs. Experience managing food allergies, special diets, medical meal modifications, and dietary substitutions . Thorough knowledge of USDA child nutrition requirements. audits, monitoring visits, and compliance reviews . Excellent documentation, organizational, analytical, and communication skills. Ability to translate regulatory and nutritional requirements into practical procedures that culinary employees can consistently execute. Experience working with early childhood programs, schools, healthcare, institutional foodservice, or other regulated nutrition programs is highly desirable.
