Responsibilities:
Preparing Batches Determine the quantities of raw materials to be used; Coordinating with plant personnel to obtain sufficient trial quantities of raw materials Fill in the test sheets for the Raw Material batch codes and the respective entry form; Ensure that the raw materials are weighed accurately; Processing raw materials when necessary; Ensuring the cleanliness, hygiene and tidiness of the equipment used; Packing the processed fruit and storing the remaining fruit; Preparing the weighing of fruit for formulas when necessary. Cooking Batches Carrying out the formula according to the parameters and procedures defined in the technical sheet, and keeping records; Checking the defined specifications: brix; pH; consistency; etc., in accordance with the implemented procedures; Compare (when necessary) with existing samples (fridge/freezer); Label the packages and pack the products; Applying the preparation to the respective base for organoleptic testing; Testing new flavors and colors; Entering all critical information into the different systems.
Other responsibilities:
Analyzing alternative raw materials; Checking other physical-chemical parameters: retention, aw, color, titratable acidity, etc.; according to the procedures implemented; Conducts long-term shelflife studies at the direction of project managers Preparing and carrying out triangle tests; Ensuring the maintenance of the laboratory's production archive; Dispatching samples approved for shipment; Ensuring the cleanliness, hygiene and tidiness of the workplace; Ensuring that forms and checklists are filled in correctly, completely, accurately and legibly; Participating in general cleaning, organization and inventory.
Qualifications:
Technical certificate in chemistry or biology and/or experience in a related industry preferred 2-3 years of relevant experience preferred Experience working in a laboratory setting required Minimum 1-2 years experience, preferably in a manufacturing setting Knowledge of GMPs, HACCP, CCPs and Food Safety (e.g. BRC) required Must be able to lift 50+ lbs.; be able to stand, bend, lift, twist, and turn for extended periods of time Must be motivated, able to multi-task and problem solve, be task and detail oriented, and work effectively in a team environment Must be safety and quality conscious
