A Baker assembles ingredients and bakes breads, pastries, or a variety of other baked goods. May specialize in baking a particular product, such as bread or cakes, or specialize in a particular style of baking. Works in an independent bakery, restaurant, grocery store, or food manufacturing facility.
The Senior Baker plays a key role in producing consistently high-quality baked goods while bringing a strong level of technical skill, judgment, and independence to daily bakery production. This position is responsible for executing a wide range of bakery products, managing more complex production tasks, identifying and resolving routine quality or production issues, and helping maintain the bakery's standards for craftsmanship, consistency, efficiency, and food safety. The Senior Baker also serves as a knowledgeable resource for other members of the bakery team and may assist with training and supporting newer bakers and production staff.
KEY RESPONSIBILITIES
Baking & Production Independently prepare and bake breads and other bakery products. Accurately execute recipes and production procedures while maintaining consistency in quality, taste, appearance, and yield. Mix, shape, proof, bake, and finish products according to established bakery standards. Handle more complex or technically demanding production assignments. Organize and prioritize assigned production to meet daily schedules and business needs. Anticipate production needs and communicate potential delays or problems to the lead baker or manager. Quality Control & Troubleshooting Evaluate the appearance, texture, flavor, bake, and overall quality of finished products. Identify and troubleshoot routine issues involving dough consistency, fermentation, proofing, baking temperatures, baking times, and finished product quality. Make appropriate adjustments within established recipes and production standards to maintain consistency. Recognize when a production or recipe issue requires escalation to the lead baker or manager. Help identify recurring quality issues and contribute ideas for improving consistency and production processes. Production Planning & Efficiency Review production needs and help ensure assigned products are completed accurately and on schedule. Coordinate multiple products and production stages efficiently throughout the shift. Help maintain an organized workflow during high-volume production period Communicate ingredient, equipment, timing, or staffing concerns that could affect production. Support the bakery team in prioritizing work when production needs change Inventory & Ingredient Management Monitor ingredient levels and communicate shortages or anticipated needs to the lead baker or manager. Help ensure ingredients are properly stored, rotated, labeled, and maintained for freshness. Use ingredients responsibly and help minimize unnecessary waste. Identify unusual ingredient quality or consistency issues that may affect finished products. Equipment Operation Safely and efficiently operate bakery equipment, including mixers, ovens, dough sheeters, and other production equipment. Perform routine equipment cleaning and basic troubleshooting. Recognize equipment performance issues that may affect production or product quality. Promptly report equipment malfunctions or maintenance needs. Training & Team Support Serve as a resource for Bakers and Bakery Production Assistants during daily production. Demonstrate proper baking techniques, equipment use, food handling, and production procedures. Assist with hands-on training of newer team members as directed by the lead baker or manager. Provide helpful, respectful guidance when correcting production techniques or procedures. Model strong standards for organization, craftsmanship, cleanliness, efficiency, and teamwork. Collaboration & Communication Work closely with bakers, production staff, and management to maintain smooth daily operations. Communicate clearly about production status, quality concerns, equipment issues, and other operational needs. Step into different production areas as needed to support the team during busy periods. Contribute ideas and observations that may improve product quality, workflow, or efficiency. Kitchen Cleanliness & Sanitation Maintain clean and organized production areas, equipment, tools, and workstations. • Follow all food safety and sanitation requirements. Help ensure proper cleaning procedures are consistently followed throughout the bakery. • Reinforce good sanitation and food-handling practices through example. Health & Safety Follow all established food safety, sanitation, and workplace safety procedures. Use bakery tools and equipment safely and properly. Identify and communicate potential safety concerns. Help maintain a work environment that supports safe and efficient production.
EXPERIENCE & QUALIFICATIONS
Previous professional bakery or commercial baking experience required. Strong working knowledge of bakery production methods, equipment, and techniques. Demonstrated ability to independently execute a variety of bakery products with consistent results. Ability to recognize and troubleshoot common baking and production issues. Strong time-management and organizational skills with the ability to manage multiple production priorities. Ability to work efficiently and maintain quality standards in a fast-paced production environment. Comfortable providing guidance and hands-on support to less-experienced team members. Dependable, collaborative, and committed to maintaining high standards of quality and craftsmanship. Training will be provided on BreadHaus-specific products, recipes, procedures, and standards.
