Required Years of Experience 1 year Job Details Assistant Baker - early morning Company Scram Bakery is a scratch bakery and café known for its egg sandwiches and breakfast pastries — laminated croissants, milk bread buns, pastries, and fresh-baked goods made to a high standard every day. We're a very small team so we are looking for the perfect fit who can work alongside the owners daily. Currently open Thursday-Sun. Position We're hiring an Assistant Baker to do the a.m. bake and support daily production under the Head Baker. You'll be hands-on with mixing, lamination, shaping, proofing, and baking — learning and executing our recipes. This is a great fit for someone with some kitchen or bakery experience who's serious about their craft and wants to develop in a professional scratch bakery. What you'll do Open the kitchen at 3:30am and begin the bake-off Assist in daily production of pastries, breads, croissants, and other baked goods. Mix, laminate, shape, proof, and bake to standard, maintaining consistency batch to batch Weigh and portion ingredients accurately; follow recipes and production sheets precisely Keep the bakery stocked and on schedule so the café opens ready every day Inventory control of all baked goods and ingredients Follow all food-safety and sanitation standards; keep stations, equipment, and storage clean and organized Label, date, and rotate product using FIFO Assisting other team members as needed or when business needs dictate What we're looking for A valid ServSafe Food Handler Certificate is required for this role — must be held at time of hire or obtained before your first shift Some bakery, pastry, or professional kitchen experience preferred; lamination experience a plus (we'll train the right person) Genuine interest in scratch baking and craft — you take pride in doing it right Able to follow recipes and instructions precisely and repeat them consistently Strong attention to detail, cleanliness, and time management, with a constant sense of urgency Reliable, punctual, and a team player with excellent communication and interpersonal skills An ability to perform prep work in a timely fashion Comfortable with early-morning shifts, all weekends, and holidays Able to stand for long shifts and lift up to 50 lbs; comfortable working near ovens and in a fast-paced environment Looking forward to meeting you and exploring your candidacy with our team.
