Job Description
Il Buco Commissary, the East Hampton bakery and newest member of the Il Buco Family, is growing our team. Rooted in the tradition of the beloved Il Buco Restaurant, our bakery focuses on artisanal techniques, naturally fermented breads, and high-quality ingredients. We are seeking an experienced and passionate Head Baker to lead our bread program and bakery team. This is a hands-on leadership position for someone with strong technical baking experience who is equally excited about developing people, improving production systems, and maintaining exceptional quality and consistency as the bakery continues to grow. The Head Baker will oversee daily bread production and work closely with Commissary and Culinary leadership to build a strong, efficient, and sustainable year-round bakery operation. Key Responsibilities Lead daily bread production, including mixing, fermentation, scaling, shaping, proofing, and baking Oversee and maintain the quality and consistency of our naturally fermented and rustic bread program Manage, train, and develop the bakery team, establishing clear standards and accountability Create and manage production schedules and pars based on restaurant, wholesale, retail, and market needs Demonstrate strong technical knowledge of naturally leavened breads, rye breads, fermentation, and artisan baking techniques Maintain and develop recipes, production procedures, and training standards Monitor yields, ingredient usage, waste, and production efficiency Work collaboratively with Commissary and Culinary leadership on product development, production planning, and growth of the bakery program Coordinate with pastry and other Commissary teams to support efficient use of shared space, equipment, and resources Maintain the highest standards of food quality, consistency, and presentation Maintain a clean, safe, organized, and compliant production environment Oversee the proper use and basic maintenance of bakery equipment, including ovens, mixers, proofers, and refrigeration Help identify opportunities to improve workflow, organization, efficiency, and overall bakery operations Required Qualifications 5+ years of professional baking experience, preferably in a high-quality artisan or high-volume bakery environment Previous leadership or supervisory experience within a bakery or production environment Deep understanding of naturally fermented bread production, fermentation, mixing, shaping, proofing, and baking Experience managing production schedules and maintaining consistency at scale Strong leadership skills with the ability to train, motivate, and develop a team Strong organization, communication, and problem-solving skills Experience operating and maintaining professional bakery equipment Food Handler/Food Safety certification preferred Ability to remain calm, organized, and adaptable in a fast-paced production environment Flexible schedule with availability for early mornings, weekends, and holidays Physical Requirements Ability to lift up to 25 lbs frequently and 50 lbs occasionally Ability to stand for extended periods with regular bending, reaching, and movement Ability to work comfortably in a bakery environment with varying temperatures Growth Opportunity Il Buco Commissary is continuing to grow its bakery, wholesale, and year-round production programs.
