About Little Loaf:
Hello! We're Little Loaf Bakeshop, a Hudson Valley-based vegan bakery that focuses on creating daily moments of joy through creative, high-quality pastries, desserts, breakfast and lunch items, and more. We are proud to be an LGBTQ+ and women-owned business.
What We're Looking For:
We are looking for a full-time, experienced overnight baker to join the team! Approx 4 days a week.
Responsibilities:
Ensuring proper proofing and baking of Croissants, Scones, Cookies, Danishes, Brioche, and Pretzels Garnishing pastries after they are baked Checking stock levels of prep and making prep for pastries, including fillings, frangipane, garnishes, cookie mixes, bread mixes, and more. Scooping cookies and shaping brioche, focaccia, and other breads Maintaining a clean and organized work environment Doing dishes created by overnight baking (clean as you go) Maintaining communication with daytime bakers and the owner through WhatsApp Scaling, mixing, and baking cupcakes, cakes, buttercreams, and other prep
Schedule :
The schedule for this role is set, but how it's described really depends on how you look at it. If you've worked overnights you get it! You might see 10pm as "night" and you might see it as "morning." So here is the shift, in two different ways of saying it: Must be available weekends and certain holidays
Compensation:
Base Hourly:
$16.00 to $18/hr based on experience, paid weekly Avg Pooled Tips (on top of base): $4.00-$5.00/hr
Total Comp:
$20-$23/hr+

Table:
This is a critical role for the production of all of our products—and with our volume, we can't consider anyone without at least 1 year of professional baking experience. You'll be working with our owner to ramp up, but we expect you to be able to ride without the training wheels after a few weeks. You'll be working with one other person and at times by yourself, so you need to be organized, know how to manage your time, and know how to think on your feet. Top skills you'll need (both for the job and to be a team member):
Experience:
At least 1 year of experience with mid to high volume baking; ideally with overnight experience because this is truly a different lifestyle Time management: You get how to pace the bake based on time and temp, production needs (mixes, pastry creams, etc), know when something is proofed or not, and understand the importance of keeping up with dishes while you go Attention to detail: You know the importance of making consistently beautiful products, and know how to balance speed with precision Solid communication skills: we use WhatsApp so we don't blow up peoples' texts…but using it for work is a requirement Positive attitude: late nights/early mornings are tough - but they can also be really fun Creative ideas: We love trying new ways of doing things, and for this role, always thinking about how to improve our process or organization is a huge plus
