This position is overnight and would work from 11:00 PM to 6/7:00 AM. The doughs must rise before they can be rolled, proofed a second time, and baked. Overview We are seeking a dough/batch mixer to join our bakery team, specifically our bread team. The candidate will be crucial in preparing and mixing ingredients for our variety of bread loaves, English muffins, dinner rolls, etc. An ideal candidate would have some baking experience and would be knowledgeable of food safety standards. The ability to work in a fast-paced environment and lift heavy items (batches of dough, 50-lb sacks of flour, etc.) is essential. This position is perfect for someone who wants to put on some music or a podcast and work independently overnight. Mixers work alone for the majority of their shift, with other staff coming in early in the morning to boost energy towards the end of the mixer's shift. Responsibilities Prepare and mix ingredients according to specified recipes and production schedules. Ensure compliance with sanitation standards as well as Ric's Bread safety rules/regulations Operate mixing equipment safely and efficiently, demonstrating mechanical knowledge. Maintain cleanliness of work areas, tools, and equipment to uphold food safety standards. Conduct quality checks on mixed products to ensure consistency Assist in food preparation tasks as needed, including baking and processing activities. Utilize basic math skills for measuring ingredients accurately. Collaborate with team members to optimize production processes and meet output goals. Work well independently and maintain schedule to not delay other team members. Some Additional Responsibilities (Outside of mixing) Some baking (croissants, sourdough, sticky buns, etc.) Bagel making (proofing, boiling, baking, etc.) Requirements Previous experience and/or education in baking is preferred. General knowledge of cooking techniques, sanitation practices, and food safety regulations. Proficiency in food preparation techniques, including knife skills and baking methods. Ability to work effectively in a team-oriented environment while maintaining individual accountability. Excellent attention to detail with a focus on quality assurance in food production processes. Strong communication skills and the ability to follow instructions accurately. Previous jobs working overnight and/or preference for working overnight highly encouraged. Pay This position will begin between $18 and $20 per hour (based on experience). Schedule This position is set for between 30 and 40 hours per week. The shift for this position is 11 pm to 6/7 am, five days a week, to ensure that all doughs are proofed and ready for bakers to bake by 6 am. Room for Growth While we are looking for someone to mix and maintain the quality of products that Ric's Bread has already established, this position has room to grow.
