We're looking for a Lead Bartender who understands that great bartending is not just about making drinks, it's about creating an experience. The Role As Lead Bartender, you will own the bar program at Oto Sushi. This is a leadership position for someone who operates with intention, moves with urgency, and holds a high standard for both product and service. You will be responsible for execution, team leadership, and maintaining a bar program that mirrors the integrity of our kitchen: scratch-driven, thoughtful, and consistent. What You'll Do Lead bar service with precision, speed, and presence during high-volume shifts Execute and maintain a scratch cocktail program (house-made syrups, fresh ingredients, no shortcuts) Train and mentor bartenders to meet Oto standards of consistency and hospitality Maintain a clean, organized, and highly functional bar at all times Ensure drinks are delivered quickly and accurately to both guests and service well Uphold a guest experience that feels elevated but never pretentious What We're Looking For 8+ years bartending experience, with at least 3 year in a leadership role Experience in high-volume, high-standard restaurants Strong knowledge of classic cocktails, Japanese spirits (sake, shochu, whisky), and modern techniques A disciplined approach to cleanliness, organization, and execution Ability to lead a team while staying calm under pressure Someone who takes pride in their craft and holds themselves to a higher standard than what's expected Why Oto Be part of a brand redefining what sushi can look and feel like Work in an environment that values quality over shortcuts Opportunity to shape and grow a bar program with intention A team that is building something long-term not just another restaurant Compensation $19/hour + tips (average $200-400 night) Growth opportunities as we expand
