They step out of 2026 and into something slower, more human, more romantic. We have one goal. Vernon's will be the number one restaurant in New Mexico. Not top five. Not in the conversation. Number one. Every seat on this team exists to deliver that standard, and at a speakeasy, the bar doesn't support the show. It is the show. The Role At Vernon's, the program in the glass co-headlines with the program on the plate. Our cocktails are signature to the room, not lifted from a national playbook, and every pour is a craft. You'll work behind the bar and on the floor: building cocktails, serving bar-top dining, and running tables at a fine dining standard. This is a seat for a professional. Bartenders here set the bar alongside the cooks, and the guest at seat three should get the same experience Wednesday at 6 as Saturday at 9. What You'll Own Cocktail execution at a craft standard: our signature list, classics done right, and the judgment to build for the guest in front of you Full service at the bar top Table service in the room, at the same standard as the bar Bar prep before and during service, so the night never catches you behind Menu fluency across food and beverage. Guests will ask you about everything on the plate, and "I'll check" is not the house standard.

the refill offered before it's requested, the pacing read off the table without being told What We're Looking For 3+ years of restaurant experience, or 2+ years in fine dining Real depth in spirits: scotch, bourbon, whiskey, tequila, rum, and vodka, and the craft cocktail canon Working knowledge of fine wine and fine dining service standards Food literacy, including meat temperatures and preparation. You'll be selling the menu, not just the bar. Calm, subtle urgency under pressure. The room never sees you rush.

Schedule Vernon's is open Wednesday through Sunday. Typical shift runs 3:30pm-11:30pm and may run longer based on reservations. Closed Mondays and Tuesdays, with occasional special events and expanded holiday hours. Friday and Saturday availability is required. You'll meet several members of the team during the interview process, because this room runs on the people in it choosing each other.
