POSITION PURPOSE
To assist the Food Service Director at the County Jail with planning, preparation, serving, and clean-up of daily meals along with other kitchen duties as may be assigned.
RESPONSIBILITIES
The essential functions of the position include but are not limited to the following: Reviews menu plans to determine types and quantities of food necessary for meals. Orders food items, deals with vendors and other potential providers of food and supplies, and inspects orders upon delivery. Assists in maintaining an ongoing inventory of food supplies in storage, coolers and freezers and rotates stock accordingly. Assigns various tasks to inmate food service workers assigned to the kitchen. The various tasks will include assisting in food preparation, portioning of food and meal delivery. Other tasks include washing trays, dishes, cups, utensils, and sweeping, mopping, cleaning and other kitchen related tasks to maintain sanitary conditions. Makes sure all staff and inmates working in food service that are involved with the handling of food such as delivery, cooking and plating etc. be certified according to Pennsylvania Law as being free of communicable diseases. Plans cooking schedules so all meal items are ready at specific times. Maintains ongoing count of meals to be served and ensures the appropriate number of meals are distributed to the inmates. Ensures proper inventory and security of all kitchen utensils including knives. Makes recommendations to the Food Service Coordinator in regards to changes in food service policies and procedures and recommends revisions to procedures related to food storage, preparation, and service as appropriate. Ensures compliance with the policies and procedures. Will notify the Officer in Charge of any inappropriate behavior of inmate food service workers. May also recommend to the Officer in Charge that work orders of inmate food service workers be terminated for inappropriate behavior of for failing to perform assigned tasks. Maintains records on inmates with special dietary needs and ensures that meals are prepared in accordance with the dietician and food service coordinators recommendations. Maintains necessary records on the food service equipment and ensures that it is properly maintained. Recommends purchases of food, supplies and equipment. Monitors department expenditures for food, equipment and supplies. May be required to make menu changes due to out of stock items, failure of stock to arrive, or other. Any changes will be noted on a substitution list. Monitor daily cleaning list and add specifics to the list as needed. Staff will be notified of problem areas. Maintains state mandated Serv-Safe certification. Perform any additional duties as directed by the Sheriff or Assistant Wardens.
QUALIFICATIONS
Education:
High school graduate and ability to obtain Serv-Safe certification.
ADDITIONAL REQUIREMENTS
1. Ability and willingness to work in a sometimes noisy environment that may be highly volatile with complex and potentially dangerous conditions for staff and inmates. 2. Ability to stand or sit for prolonged periods of time while maintaining concentration and attention to detail. 3. Protect yourself, staff, and inmates by using required hairnets, gloves, goggles, and masks. 4. Ability to lift up to fifty (50) pounds. 5. Be aware of and stay alert to all safety hazards posed by equipment, the working environment, or inmates. 6. Be aware of and stay alert to the possibility of exposure to hazardous chemicals and infectious or contagious diseases.
