Director of Food & Beverage / Food & Beverage Manager / General Manager
BASIC PURPOSE
The Food & Beverage Supervisor is responsible for overseeing the day-to-day operations of the hotel's food and beverage outlets, including restaurants, bars, catering, and banquet operations. This position ensures efficient operations, exceptional guest service, compliance with company standards, and effective supervision of F&B team members.
ESSENTIAL FUNCTIONS & RESPONSIBILITIES
Assist with the recruitment, interviewing, hiring, onboarding, and training of Food & Beverage team members. Provide ongoing coaching, follow-up, and performance monitoring to ensure departmental standards are consistently met. Conduct performance evaluations, address employee concerns, resolve workplace issues, and administer corrective action when appropriate. Oversee daily operations of all Food & Beverage departments, including restaurants, bars, catering, and banquet services. Work closely with the Sales Team to maximize revenue and effectively coordinate events and functions requiring Food & Beverage services. Monitor departmental expenses and implement cost-control and cost-saving procedures. Monitor food, beverage, liquor, and supply inventory levels to ensure adequate stock and minimize waste. Partner with the Culinary Team and Director of Food & Beverage to develop and implement menu ideas, promotions, and revenue-generating opportunities. Maintain open and effective communication with all F&B team members to ensure the delivery of exceptional guest service. Assist with covering operational shifts as needed due to call-offs, staffing shortages, or approved time off. Assist other departments and team members with operational needs and additional tasks as assigned by management. Ensure all departmental policies, procedures, and service standards are communicated and consistently enforced. Maintain a professional, positive, and service-focused presence while interacting with guests and team members.
KNOWLEDGE & SKILLS
Education Post-secondary education preferred, including specialized training in Culinary Arts, Hospitality, or Food & Beverage Management. Experience Minimum of two years of experience in a related Food & Beverage, restaurant, or hospitality position. Previous Food & Beverage supervisory or management experience preferred. Knowledge of hotel and restaurant operations, practices, and procedures. Skills & Abilities Strong leadership, supervisory, and team-building skills. Ability to effectively communicate with hotel management, team members, vendors, and guests. Ability to manage multiple priorities in a fast-paced and frequently changing environment. Ability to understand and adhere to departmental budgets, financial goals, and cost-control expectations. Strong written and verbal communication skills, including the ability to compose professional business correspondence. Ability to remain calm, professional, and objective under pressure. Strong problem-solving and decision-making skills, including the ability to anticipate, identify, and resolve issues. Excellent listening skills with the ability to understand, clarify, and appropriately respond to team member and guest concerns. Thorough knowledge of departmental policies and procedures and the ability to communicate and enforce them fairly and consistently. Ability to supervise and lead a team of five or more employees.
TRAVEL REQUIREMENTS
Minimal travel may be required for training classes, vendor meetings, task-force assignments, or other business-related activities.
SCHEDULE REQUIREMENTS
Must be flexible and available to work evenings, weekends, holidays, and extended hours as business needs require. Must adhere to all company timekeeping and attendance policies.
PHYSICAL REQUIREMENTS
Lifting / Pushing / Pulling / Carrying Frequent and daily lifting, pushing, pulling, and carrying of hotel equipment, tools, carts, supplies, and other items of varying weights.
Bending / Kneeling
Frequent bending, kneeling, and reaching throughout the workday. Mobility Requires the ability to move throughout all areas of the hotel as needed.
Standing / Walking
Requires prolonged and continuous standing and walking throughout the workday.
Stairs / Ladders
May require frequent use of stairs and, when necessary, ladders. Driving Occasional driving may be required for business purposes, including transporting supplies or equipment.
WORK ENVIRONMENT
Primarily an indoor position requiring work in a fast-paced and often unpredictable hospitality environment. Frequent interaction with guests, team members, managers, and other departments. Work may be performed around heat- and cold-producing equipment, wet floors, congested work areas, and other typical restaurant and hotel conditions. Requires the ability to work effectively in a diverse and team-oriented environment.
COMMUNICATION & SENSORY REQUIREMENTS
Ability to clearly communicate, understand, and respond to instructions and requests. Ability to train, coach, mentor, and provide direction to Food & Beverage team members. Ability to communicate company policies, procedures, and performance expectations effectively. Ability to communicate professionally and courteously with guests, coworkers, vendors, and management. Strong written and verbal communication skills, including the ability to compose professional business emails. Ability to read, interpret, and respond to reports, written requests, policies, procedures, and other business-related documents. Ability to visually monitor operations and identify service, safety, and operational concerns.
CHEMICALS / AGENTS
Position may involve exposure to water treatments, commercial cleaning and degreasing products, kitchen-related chemicals, and other substances commonly used in hotel and restaurant operations.
PROTECTIVE EQUIPMENT / CLOTHING
Non-slip shoes required. Protective gloves must be worn when required or appropriate. Hairnets and beard coverings must be worn when required or appropriate.
EQUIPMENT OPERATION
Frequent use of a variety of kitchen and Food & Beverage equipment and appliances, including manual and electrically powered equipment. Must follow all applicable safety procedures when operating equipment.
OTHER CONSIDERATIONS
Professional appearance and grooming are essential due to the high level of guest and team member interaction associated with this position. Must consistently represent the hotel and company in a professional manner.
