  • San Diego, CA Part-Time | Evening and Weekend Availability Preferred Tabu Shabu North Park is looking for a reliable and hardworking Kitchen Meat Slicer / Prep Cook to join our team.
The protein station is the lead position in our kitchen, and this is an all-around kitchen role. The primary focus is slicing, trimming, portioning, and properly storing meats for daily service — every plate is portioned by weight to exact standards. The position is equally responsible for vegetable prep, and must become proficient at preparing vegetable plates, appetizers, sides, sauces, and soups. Seafood preparation, inventory organization, kitchen cleanliness, and opening and closing duties round out the role. Our kitchen is small and team-oriented. We are looking for someone who takes ownership of the slicing station, completes all assigned kitchen preparation, and is willing to learn every part of the position. ## Responsibilities
  • Slice beef and other proteins to exact weight, thickness, and presentation standards
  • Trim meats carefully to minimize waste and maximize usable product
  • Weigh incoming meat deliveries and record trim loss on the daily trim report
  • Weigh, portion, package, label, date, rotate, and properly store sliced proteins using our labeling system
  • Manage meat temperature by rotating blocks between freezer and refrigeration so they slice at the correct firmness
  • Complete the daily prep/par checklist at the start and close of each shift
  • Prepare seafood — filleting and portioning salmon (including poke), peeling and deveining shrimp — and store it properly on fresh ice daily
  • Prepare vegetable plates, appetizers, noodles, sauces, soups, and other ingredients to restaurant standards
  • Fully break down, clean, and sanitize the meat slicer after every shift (machine off and unplugged), along with knives, cutting boards, worktables, and the surrounding area
  • Follow all food-safety procedures when handling raw proteins and other ingredients
  • Keep the kitchen, floors, shelves, refrigerators, storage areas, equipment, and workstations clean and organized
  • Receive, inspect, and organize deliveries
  • Report spoiled, damaged, incorrectly stored, or low-stock products promptly
  • Minimize food waste through proper preparation, portioning, rotation, and storage
  • Restock kitchen and service supplies throughout the shift
  • Follow all opening, closing, sanitation, and food-safety procedures
  • Complete assigned preparation and closing duties before leaving
  • Learn the dishwashing station so coverage can be provided when necessary ## What We Are Looking For
  • Dependable, punctual, and able to complete assigned work without constant supervision
  • Strong attention to portion accuracy, consistency, cleanliness, and food safety
  • Comfortable handling raw meat and safely operating a commercial meat slicer
  • Able to follow recipes, preparation standards, and instructions consistently
  • Able to run more than one station and manage several preparation responsibilities during the same shift
  • Comfortable working quickly during busy periods
  • Willing to learn all required kitchen duties, including backup dishwashing
  • Able to communicate respectfully and work as part of a team
  • Previous meat-slicing, butcher, prep cook, or restaurant kitchen experience is preferred, but we will train the right person
  • Food Handler Card required, or must be obtained within 30 days of hire ## Physical Requirements
  • Ability to stand and move throughout the shift
  • Ability to safely operate a commercial meat slicer and kitchen knives
  • Ability to bend, reach, lift, and carry kitchen supplies
  • Ability to safely lift approximately 40 pounds
  • Ability to work around hot equipment, steam, water, sharp tools, and refrigerated products
  • Ability to perform repetitive slicing, portioning, preparation, and cleaning tasks ## Schedule
  • Part-time shifts
  • Primarily evenings and weekends
  • Friday, Saturday, and Sunday availability is strongly preferred
  • Hours may vary depending on restaurant volume and preparation needs
  • Reliable attendance for scheduled shifts is essential ## What Success Looks Like A successful Kitchen Meat Slicer /
Prep Cook:
  • Produces consistently sliced and accurately portioned meats
  • Completes all required meat, seafood, and vegetable preparation before service
  • Minimizes unnecessary trim loss, spoilage, and food waste
  • Keeps proteins and other ingredients properly labeled, rotated, refrigerated, and safely stored
  • Maintains a clean and sanitized slicer, preparation station, and kitchen
  • Keeps daily trim and prep logs accurate and up to date
  • Keeps inventory and storage areas organized
  • Communicates shortages, quality concerns, and equipment issues promptly
  • Completes opening and closing duties thoroughly
