Job Description
Join the team at Rolf and Daughters! For more than a decade, Rolf and Daughters has been one of Nashville's most respected kitchens, known for handmade pasta, whole animal butchery, seasonal cooking, thoughtful hospitality, and deep relationships with farmers, producers, and winemakers. We are seeking a skilled and dedicated Butcher to join our team. This role is responsible for the fabrication of whole animals, poultry, and seafood, along with some charcuterie production. The position is a core part of what has defined our kitchen for over a decade. Days start at 8:00 a.m. The ideal candidate is punctual, dependable, self-motivated, and a strong team player. Responsibilities include receiving and checking in daily orders, breaking down whole animals and seafood, contributing to recipe development, maintaining a clean and organized workspace, and helping oversee the walk-in. Our kitchen works with exceptional ingredients and a menu that evolves constantly with the seasons. This role offers hands-on experience in whole animal butchery, charcuterie, preservation, and the execution of thoughtful, ingredient-driven food — with real opportunity to sharpen technical craft and grow within the kitchen.
