This position will primarily work with boxed beef and subprimal cuts , trimming and portioning steaks according to our restaurant's specifications. The ideal candidate must be able to consistently cut steaks to designated weights while maintaining quality, appearance, and maximum product yield. Responsibilities Cut and portion boxed beef into steaks according to restaurant specifications Accurately cut steaks to designated weights Trim and portion subprimal cuts Use a scale to verify portion weights and maintain consistency Produce steaks with consistent thickness, shape, and presentation Properly trim excess fat and connective tissue while maximizing usable product Maintain strong yields and minimize unnecessary trim and waste Follow established portion-control standards to help maintain food-cost goals Properly wrap, label, date, rotate, and store prepared steaks and remaining product Monitor meat quality and communicate inventory or quality concerns to management Maintain clean and sanitary knives, cutting boards, equipment, coolers, and work areas Follow all food-safety, sanitation, and temperature-control procedures Qualifications Previous professional meat-cutting experience required Experience working with boxed beef and subprimal cuts strongly preferred Must be able to consistently portion steaks by specific ounce weight Strong knowledge of common steak cuts and proper trimming techniques Excellent knife skills Strong understanding of portion control, product yield, and waste reduction Ability to work efficiently without sacrificing accuracy or quality Ability to safely lift and handle boxed beef and other products weighing approximately 50 pounds or more
