Job Overview ATCO Structures & Logistics is seeking a Culinary Head Chef to join our team in Arizona. The Culinary Head Chef is responsible for the daily operations of the kitchen, provides professional leadership and direction to the kitchen personnel. Creating of menus, ordering of products and ensuring all food services are performed to the highest of standard possible. Responsibilities Manage food services in strict compliance with Food Service Management Guides, County, State and Federal regulations. Manage and plan menu's appropriate to the clientele in accordance with the Contract Scope of Work and within approved budgets Manages monthly inventory and inventory control Adheres to labor matrix and controls labor costs Ensure that all meals are prepared and served to the highest standards while maintaining cost control and ensuring products are used effectively Set standards through recipe cards, recipes, procedures, photos and other forms ensuring that the highest of standards are maintained and consistent. Oversee the Kitchen Staff and ensure all duties are performed in a professional and timely manner Ensure the correct amounts of products are ordered for the capacity of the operation Oversee customer relations Ensures that all Health & Sanitation inspections, HACCP and similar practices are met consistently daily and that procedures are in place to maintain a Safe, Healthy positive working environment Responsible for training and monitoring employees to ensure Food Safety and Health and Safety procedures are being followed Conduct daily safety meetings with all kitchen staff Inspect facilities or equipment for regulatory compliance and ensure Planned Maintenance is being done Gives direction and be responsible and accountable for the implementation of Plans. Monitor's effectiveness and introduces changes in response to the marketplace. Set targets, plan and schedules work meeting and exceeding performance indicators Sets excellent customer service and work examples Actively involved in ensuring staff and themselves are following safety procedures and are adhering to government regulations as well as Client Health and Safety, policies and procedures. Various other duties as assigned by management from time to time Qualifications A minimum of 5 years' experience in an Executive Chef position in a complex kitchen operation is required. The successful candidate must hold a Culinary ACF, CCC, CMC or Red Seal or equivalent Hold Food Safety Certification - CFPM Must have
OSHA-30 MSHA 5000-23
would be an asset Prior experience working in large facilities such as remote industrial workforce camps, universities, or hospitals setting is an asset. Experience in menu development is required Professional communication skills, oral and written, in a leadership role Strong ability to train, mentor, coach and guide performance to personnel in all positions Innovative and creative problem solver in finding solutions and opportunities Strong organizational, time management, and report writing skills Proficient using MS Office software We would like to thank everyone for their application; however, only those being considered for an interview will be contacted.
