Responsibilities Prepare a variety of sushi and sashimi using traditional techniques and modern innovations, ensuring each piece is crafted with precision and artistry. Design and develop sushi menus that balance creativity with customer preferences, incorporating seasonal ingredients and trending flavors. Maintain impeccable food safety and hygiene standards in all aspects of food handling, storage, and preparation to ensure compliance with health regulations. Manage ingredient inventory efficiently, ordering supplies as needed to keep the kitchen stocked with fresh seafood, rice, vegetables, and other essentials. Collaborate with kitchen staff to coordinate meal preparation for dine-in service, catering events, and special occasions. Demonstrate excellent knife skills for slicing fish and vegetables accurately while minimizing waste. Ensure all food is prepared according to recipe specifications and presentation standards. Assist in training junior kitchen staff on sushi techniques, food safety practices, and proper handling procedures. Contribute to a positive team environment by supporting colleagues and maintaining a clean, organized workspace. Stay updated on culinary trends within the food industry to continuously elevate the quality of offerings. Skills Extensive culinary experience with a focus on Japanese cuisine or fine dining environments. Proven expertise in sushi preparation, including fish filleting, rice cooking, rolling techniques, and knife skills. Strong knowledge of food safety protocols and proper food handling procedures. Experience in menu planning that emphasizes freshness, presentation, and customer satisfaction. Background in food service or restaurant environments with excellent customer service skills. Ability to work efficiently under pressure while maintaining attention to detail in meal preparation. Familiarity with catering operations and serving large groups or events is a plus.
