In this role, you will run the wok station during busy services, delivering high-quality, authentic dishes with speed, precision, and consistency. The ideal candidate possesses deep knowledge of high-heat cooking techniques, excellent knife skills, and a commitment to food safety and cleanliness. Key Responsibilities Manage the wok station to prepare, season, and execute stir-fry dishes according to standardized recipes and ticket orders. Control high-heat wok burners to achieve proper cooking standards and signature wok hei (breath of the wok).
Handle daily station prep:
slicing proteins, chopping vegetables, mixing house sauces, and ensuring all mis en place is stocked before rush hours. Regulate cooking oil temperatures and monitor ingredient inventory at the station. Maintain station cleanliness, sanitation, and food safety standards following local health codes. Break down, clean, and season woks, range tops, and tools at the end of each shift. Collaborate with line cooks and kitchen leadership to ensure fast ticket turnaround times.
Qualifications & Requirements Experience:
1-3+ years of commercial kitchen experience working with high-heat woks or fast-paced sauté stations.
Technique:
Proven ability in traditional wok-tossing techniques, heat control, and rapid ingredient timing.
Knife Skills:
Proficient knife work for fast, uniform slicing and cutting of meats and produce.
Physical Stamina:
Ability to lift up to 50 lbs, withstand high kitchen temperatures, and stand/move continuously during a 6- to 8-hour shift.
Certifications:
Valid Food Handler's Card / ServSafe certificate (or ability to obtain upon hire).
