Job Summary:
Work closely with the Executive Chef in handling all aspects of the kitchen operation while maintaining and developing high quality food. Assist the Executive Chef in supervising, guiding, and motivating staff. The following is a list of essential duties and responsibilities for this position. Essential Duties and Responsibilities:
Preparation and production of meals, food quality, and presentation. Supervise staff in the proper preparation of menu items, equipment, and safety measures. Assists with menu development, special banquets, and coordination of large catered functions. Support the Executive Chef in all areas of the kitchen including establishing food and inventory control levels, purchasing and kitchen sanitation. Consult with the Executive Chef on a daily basis. Ensure proper food safety and sanitation standards to ensure guest safety. Follow all Department of Health safety and sanitation rules and regulations Maintain orderly and clean work environment. Oversee department in absence of Executive Chef. Assuming management roll and ordering product in absence of Executive Chef Maintain a hygiene level above that required by the local Health Department and ensures that food sanitation, safety, and proper food handling functions are practiced on a daily basis. Other duties and responsibilities as necessary. Supervisory Responsibilities Supervise five (5) to Ten (10) subordinates. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Education/Experience Associate's Degree in Food and Beverage and/or course certification from an accredited Culinary Institute, Formal Apprenticeship, or other formal Culinary Training preferred. High School Diploma or General Education Degree plus five (5) or more years of food preparation/cooking experience. HACCP/ServSafe Certification preferred
