This is a hands-on leadership role for a chef who wants to build a program from a position of real creative latitude. You'll report to the Executive Chef & Director of Food & Beverage and partner closely with the Executive Chef & Pastry Sous Chef to ensure pastry integrates seamlessly across every guest touchpoint on property, from a tasting menu dessert course to a wedding cake to VIP amenity presentations. What You'll Own Design and execute all dessert, pastry, and bread programs across the Food & Beverage Outlets Build and maintain recipe costing, food cost targets, and par levels for the pastry department in partnership with the F&B finance process Recruit, train, and develop a pastry team, including hiring decisions and daily supervision Source specialty ingredients and manage vendor relationships specific to pastry (chocolate, specialty flours, seasonal fruit purveyors) Create custom wedding cakes and celebration desserts for high-profile private events Maintain fine dining standards for presentation, consistency, and guest experience Collaborate on seasonal menu rotations tied to the property's citrus, olive, and garden identity Manage kitchen sanitation, safety, and compliance within the pastry department What You Bring Minimum 5 years as a Pastry Chef or Sous Pastry Chef in a luxury hotel, resort, or fine dining environment; Executive Pastry Chef experience preferred Demonstrated ability to run a program across multiple outlets and event types simultaneously Strong plated dessert and viennoiserie/bread skills, wedding and custom cake experience a plus Experience managing food cost and labor within a pastry P&L A leadership style suited to training and developing a team, not just executing solo Formal culinary or pastry arts training preferred, not required if experience demonstrates the level Why San Ysidro Ranch An ultra-luxury property in Montecito with a 16,000-bottle wine cellar, a working culinary garden, and a guest base that notices the difference between good and exceptional.
