Asia Live is a large-format, high-energy Asian dining destination featuring cuisines and techniques from across Asia, including Chinese, Japanese, Southeast Asian, Korean, Robata, wok cooking, sushi, noodles, and other regional specialties. We are looking for a chef who combines strong culinary skills with disciplined kitchen management, leadership, consistency, and the ability to execute at significant volume. Key Responsibilities Lead daily kitchen operations and service execution. Maintain consistent food quality, presentation, portioning, and recipe standards. Supervise, train, mentor, and motivate cooks, sous chefs, and kitchen staff. Work closely with the Executive Chef/ownership team on menu execution and development. Manage multiple kitchen stations and cooking disciplines in a high-volume environment. Maintain strong organization, mise en place, cleanliness, and readiness for every service. Control food cost, waste, purchasing, inventory, and labor productivity. Develop and enforce recipes, prep standards, station procedures, and production systems. Ensure proper receiving, storage, rotation, sanitation, and food-safety practices. Participate actively on the line during peak services. Assist with scheduling, hiring, performance management, and staff development. Coordinate closely with front-of-house management to ensure smooth service and exceptional guest experiences. Maintain equipment, kitchen organization, and operational standards appropriate for a major restaurant operation. Qualifications Minimum 5 years of progressive professional kitchen experience. Prior Chef de Cuisine, Executive Sous Chef, or comparable senior kitchen leadership experience preferred. Strong experience in high-volume, full-service restaurants. Knowledge of Asian cuisines and cooking techniques strongly preferred. Experience with wok cooking, Robata, Japanese cuisine, sushi, noodles, or Southeast Asian cuisine is especially valuable. Strong leadership and communication skills. Ability to train teams and maintain standards consistently. Strong understanding of food cost, labor management, inventory, purchasing, and kitchen financial controls. Ability to work nights, weekends, and holidays as required. California Food Manager certification or ability to obtain one. Must be organized, accountable, calm under pressure, and comfortable working in a fast-paced environment.
