Role Overview A Valley Goat Butcher / Specialized Production Cook is a highly skilled culinary professional specializing in the fabrication, preparation, and production of premium proteins and specialty ingredients. This role is responsible for expert butchery, fish fabrication, sausage production, and other advanced production techniques that provide the foundation for exceptional food across Valley Goat and Treehouse Hotel's culinary operations. Your craftsmanship, consistency, and attention to detail are essential to delivering the quality our guests expect every day. Key Responsibilities Butcher, fabricate, portion, and prepare proteins and seafood with precision and consistency. Execute specialized production tasks including deboning, trimming, filleting, sausage making, curing, and portioning. Prepare specialty items including stocks, sauces, and other foundational culinary components. Maintain appropriate inventory levels of proteins and production items while ensuring accurate labeling, dating, rotation, and storage. Collaborate with chefs to support menu development, seasonal features, and daily production needs. Maintain an exceptionally clean, organized, and efficient production area. Adhere to all food safety, sanitation, and HACCP standards throughout production. Skills & Qualifications Minimum of 3 years of professional culinary experience with an emphasis on butchery, charcuterie, or specialized production. Demonstrated expertise in protein fabrication, fish butchery, portioning, and sausage production. Experience preparing foundational culinary components, including stocks, sauces, and other production items. Strong organizational skills with exceptional attention to detail. Thorough understanding of kitchen weights, measurements, recipe execution, and yield management. Ability to work independently while managing multiple production priorities. Commitment to teamwork, professionalism, and continuous improvement. Working knowledge of food safety, sanitation, and HACCP principles.
