$25.00 per hour + Service Charge & Tip Pool (Substantial earning potential beyond base) Launch Your Fine-Dining Journey at 9,600 Feet Forget standard prep lines and high-volume churn. At Forage Breckenridge, dining is an intimate, live culinary performance. Every evening, we welcome a single seating of just 16 guests around one communal table for an avant-garde, multi-course tasting menu inspired by Colorado's mountain landscape, mining heritage, and wild, micro-seasonal ingredients. We are looking for an ambitious, eager-to-learn Commis Chef ready to build an elite culinary foundation. In our open, guest-facing kitchen, you will see every part of the craft up close—refining foundational techniques, assisting during live service, and engaging directly with our diners.
What You'll Do Learn Core Disciplines:
Work directly alongside seasoned chefs, mastering knife work, precision prep, sauce foundations, fermentations, and hyper-seasonal preservation methods. Precision Mise en
Place:
Prepare pristine ingredients for an ultra-focused 16-cover service where detail, consistency, and immaculate organization matter most.
Support Live Service:
Assist with service execution, plating details, and tableside touches in a fully open kitchen where every move is on display. Connect with
Guests:
Engage warmly with our 16 diners, learning to speak to the local ingredients, regional stories, and craft behind each course.
Kitchen Pride:
Maintain meticulous station sanitation, care for specialized culinary equipment, and respect pristine, local ingredients. What We're Looking For Culinary school graduate or 1+ years of line/prep experience with a hunger to break into high-end, modern gastronomy. Sharp knife skills, solid basic prep fundamentals, and a strong work ethic. Positive, receptive attitude—you take feedback well and strive to improve with every shift. Comfort working in a guest-facing environment with genuine curiosity about food, culture, and hospitality. Passion for local Colorado terroir, wild ingredients, and creative plating.
Compensation & Benefits Base Pay:
$25.00 / hour
