In creating the food philosophy for Belden House & Mews we seek to source from the best local farmers and purveyors to create elegant and approachable seasonal menus for our restaurant, in room dining, events, pool, and other sites on property. The Chef de Cuisine role takes full operating responsibility for day to day culinary operations, in running the kitchen — overseeing and leading an ambitious team — from ordering to leading service, managing our relationships with local farmers, purveyors, colleagues, all while honoring and evolving the culinary program and sanitation program at Belden House & Mews.

RESPONSIBILITIES
You will care for our team of sous chefs, cooks and porters. Lead by example, setting clear expectations, encouraging people to do their best work, and guiding them with positive encouragement and consistent feedback. Our culinary goals go above and beyond typical hotel F&B programs. Food, in combination with our setting, is the keystone component of the guest experience at Belden House & Mews You will play a leading role in achieving the financial goals of the department. You will be involved in ordering, leading service and managing relationships with local farmers and purveyors. We are looking for a long-term team member who will become central to our identity and cultural fabric and grow with us as our property and additional hospitality ventures expand. We pride ourselves on hiring from within whenever possible and promoting members of our team. There is much future opportunity here for the right candidate. You will hold responsibility for conducting, with assistance from the culinary team, monthly inventory of all products and goods associated within the department. Inputting, updating of prices and new ingredients on a regular basis. You will hold responsibility for costing menu items and products accurately with guidance from the Culinary Director. You will, in tandem with the Culinary Director, be responsible for menu development, dish development, and maintaining standards of execution of dishes with culinary team.
