Executive Chef — David Burke Prime, Foxwoods Resort Casino The Executive Chef leads the entire culinary operation at
David Burke Prime:
the menu, the team, the standards, and the numbers. This is a hands-on leadership role for a chef who wants to run a marquee fine-dining steakhouse at one of the largest resort casinos in North America. David Burke Prime is a classic American steakhouse at Foxwoods Resort Casino in Mashantucket, Connecticut. We are staffing the reopening of our dining room, bar, and kitchen.WHAT YOU'LL DO
Own culinary execution across the restaurant, including the dry-aged steak program, seafood and raw bar, and signature David Burke dishes Recruit, hire, train, schedule, and lead a back-of-house team of roughly 35, including sous chefs, cooks, and porters Develop menus, specials, and seasonal features in partnership with David Burke and ownership; write and maintain recipe and plating standards Manage food cost, labor cost, purchasing, vendor relationships, and inventory to budget Ensure full compliance with HACCP, health department, and tribal regulatory standards; maintain temperature logs and sanitation programs Partner with the General Manager and front-of-house leadership on service, guest experience, and eventsWHAT WE'RE LOOKING FOR
5+ years as an Executive Chef or Chef de Cuisine in a high-volume fine-dining restaurant; steakhouse and resort/casino experience strongly preferred Track record of leading large kitchen teams and hitting food and labor cost targets Deep expertise in prime and dry-aged beef, seafood, and modern American fine dining Strong organizational, communication, and hospitality-leadership skills ServSafe Manager certification required Reliable and punctual; evening and weekend availability required, and holidays are required for all positionsSCHEDULE & PAY
