Regatta Grove, The Wharf Fort Lauderdale, PIER 5, JohnMartin's, and TGTHR, our special events division. JohnMartin's has been a Coral Gables institution since 1989. Founded by John Clarke and Martin Lynch, it is a proper Irish pub and restaurant: Guinness, whiskey, hearty comfort food, a Whiskey Society, and a charity burger program called Burger for a Cause. It is one of the most food-driven rooms in our group, with a heavy calendar of sports watch parties, weekly programming, and private events. The role We are looking for a chef to run the JohnMartin's kitchen. This is the senior kitchen seat at the venue. You report to the General Manager, and the food is yours: the menu, the team, the cost, and the plate that leaves the pass. It is a hands-on job. You are on the line through service, not in an office. The right person cares as much about a burger cooked correctly at 9 PM on a Heat night as about the food cost number at the end of the month, and understands those two things are the same job. What you'll own The kitchen and the team Run daily operations across all shifts: prep, line, expo, dish, and close Hire, train, schedule, and develop the kitchen team, and hold the standard when the room gets loud Build a bench so the kitchen runs correctly whether or not you are on the clock Manage labor hours against forecasted covers without letting service or morale slip Coordinate with our kitchen staffing partners on coverage and onboarding The menu Develop new dishes and specials that fit an Irish pub, not a trend cycle Rework existing recipes for both flavor and execution speed, so dishes hold at volume Write and maintain recipe cards with yields, portion specs, and plating photos, and train the team to them so every cook produces the same plate Build food packages for sports programming, brunch, and private events Own seasonal and holiday menus: St. Patrick's Day, Halloween, NYE, Lucky Hour, wing night, Burger for a Cause Cost, inventory, and waste Own food cost against target and explain variance with real numbers, not guesses Run weekly and monthly inventory, set par levels, place orders, and check invoices against what actually arrived Track waste and spoilage daily, and act on what the numbers show Cut spoilage through smarter ordering, prep planning, rotation discipline, and cross-utilizing product across dishes Reprice or re-engineer dishes when costs move, working with the General Manager and Finance Manage vendor relationships and negotiate pricing Safety and equipment Keep the kitchen inspection-ready every day, not just before an inspection Own temp logs, labeling, rotation, allergen handling, and sanitation standards Flag equipment and facilities issues early. This is an older building, and the chef who stays ahead of a cooler or dishwasher problem saves the weekend What we're looking for Solid scratch cooking fundamentals across grill, saute, and fry, and the ability to jump on any station Demonstrated food cost ownership. You can talk through how you moved a cost percentage and what you changed to do it Real recipe development ability, including reworking dishes for consistency and speed Track record of hiring and keeping kitchen staff in a tight labor market ServSafe Manager certification, or ability to obtain within 30 days Availability for nights, weekends, and holidays. Sports and holidays are our busiest days Able to work long shifts on your feet in a hot kitchen and lift up to 50 lbs Nice to have Irish, British, or American pub food experience Experience feeding a room during large sports or event activations Catering or banquet menu experience Bilingual English and Spanish What we offer $75,000 salary
