We're creating a modern speakeasy-inspired experience built around exceptional hospitality, elevated food, and an atmosphere people will want to come back to again and again. And we're looking for the person who can help bring it all to life. The Role We're seeking a Chef / General Manager who is equal parts culinary leader, hospitality professional, and culture builder. You'll have a major hand in shaping the food, the team, and the overall guest experience from the ground up. This isn't simply a job managing a kitchen — it's an opportunity to help build something new in Pensacola. You'll lead with confidence, creativity, and a hospitality-first mindset while making sure every plate, every shift, and every guest experience lives up to the vision. What You'll Own Lead the culinary team — chefs, kitchen staff, and service personnel — creating a motivated, collaborative team culture. Set the culinary standard for preparation, presentation, flavor, consistency, and quality. Create and evolve the menu , bringing fresh ideas while staying aligned with the concept, guest preferences, and profitability. Build strong food-cost controls , including recipe costing, portion control, waste reduction, purchasing, and inventory management. Own kitchen operations , ensuring every shift runs smoothly, efficiently, and at a high level. Oversee food safety and sanitation , maintaining strict standards for food handling, cleaning, storage, and health-code compliance. Manage inventory and purchasing , keeping the kitchen stocked without unnecessary waste or expense. Lead catering, banquets, private parties, and special events with the same attention to detail as nightly service. Train and develop your team in culinary technique, hospitality, food safety, and service standards. Monitor financial performance , labor, food costs, inventory, and operational budgets to help drive profitability. Be visible on the floor and lead by example — creating the kind of hospitality that makes guests feel like insiders, not customers. Help shape the culture of a brand-new concept from the beginning. What We're Looking For You're more than a chef. You're a leader. You understand that incredible food is only part of the experience. You know how to build a team, control costs, handle a packed room, execute a flawless event, and still make a guest feel like the most important person in the building.
You bring:
Proven experience in fine dining, upscale dining, or high-volume hospitality . Strong culinary leadership and food-production experience. Extensive experience with banquets, catering, private events, or large-scale functions . A proven ability to recruit, train, motivate, and manage culinary and service teams. Deep knowledge of food safety, sanitation, food handling, and kitchen best practices. Experience with inventory systems, purchasing, menu costing, and waste control. Strong understanding of restaurant financials and labor management. Creativity and confidence in menu development. Exceptional organizational skills and attention to detail. The ability to stay calm, sharp, and positive when the room is full and the pressure is on. A genuine passion for hospitality, food, and creating memorable experiences.
