We are looking for candidates who will embody the spirit of aloha toward our ohana and guests! We are seeking an experienced Sous Chef to join our thriving culinary operation. The Sous Chef is responsible for: Supporting the Executive Chef by overseeing the performance of all culinary operations; Contributing to the Food & Beverage Strategy by staying relevant in the marketplace/following trends; Keeping concepts current; Ensuring quality control and consistency of recipes; Overseeing all Kitchen operations; Assisting with restaurant operations by planning, directing and coordinating the strategic approach to managing the culinary and front of the house operations Developing business plans covering budgeting, controlling capital and operational expenditures Product quality control, including presentation Product inventory and ordering Monitor/improve waste management Adjusting and maintaining prep pars Training and effectively managing the kitchen staff in a manner that helps boost morale and provides guidance before discipline Ensuring food safety and sanitation guidelines are taught and enforced Maintain cleanliness of all BOH areas and equipment Analyze product costs and trends to suggest changes that would be profitable while adhering to guest demand/not sacrificing quality Perform all BOH crew duties as needed including prep and supportive work, butchery and working all line stations and expediting Ensuring that all other tasks and priorities are executed as instructed by
Executive Chef/Culinary Director Requirements:
2+ years kitchen supervisory experience (Required) 2+ years BOH management at a full-service restaurant ( Preferred) Proven staff management skills Experience with high volume kitchens Desire to grow through demonstrated performance Basic knowledge of food and labor costing Flexible schedule (location is open 365 days a year) Ability to multi-task, problem-solve and work well under pressure Passion for food and cooking techniques Knowledge of Microsoft Word and Excel Previous experience in culinary arts, cooking, or other related fields Ability to thrive in a fast-paced environment
