About Mammoth Fieldhouse Mammoth Fieldhouse Marion is a competitive social venue where sport, food, and community share one roof. Pure Putt. Flight Deck. Pickleball. Battle Bats. A scratch kitchen and a full bar built to stand on their own. Open play, leagues, tournaments, and private events, all night, every night. Marion is the hub of Southern Illinois, and this Field draws far past the city limits. People will drive to get here, which means the standard has to hold on a slow Wednesday and a sold-out Saturday alike. About the Role You run the line when the Chef is not standing on it. The Sous Chef is the working leader of the kitchen. You expedite, you cook, you teach, and you hold the standard on every plate that leaves the pass. We are hiring two. One leads à la carte service and the nightly line. One leads banquet and events production and large-format execution. Tell us which one you are built for, or tell us you can do both. This is a growth seat. The Sous Chefs we hire now are who we look at first when the next Fieldhouse kitchen needs a leader. What You'll Own The Line Run service as the senior kitchen leader on shift. Expedite, call the line, and own ticket times. Execute every dish to recipe and plate spec, and correct anything that is not. Own prep planning, par levels, and production lists for your shift. Own opening and closing kitchen procedures, including temperature logs and sanitation. Team and Cost Train and coach line cooks and prep cooks in the moment. Support hiring and onboarding for the kitchen team. Control waste, yield, and portioning against cost targets. Support inventory counts and receiving accuracy. What Success Looks Like First 90

You can run the pass alone on a full Saturday and the plates go out right.First Year:
You have trained someone who can do your job, which is how you get the next one. Qualifications 3 or more years of kitchen experience, including 1 or more in a lead or supervisory role. Scratch cooking skill across multiple stations. Ability to expedite a full line under volume and stay composed. ServSafe certification, or the ability to obtain it within 60 days. Flexible schedule. Nights, weekends, and holidays required. Preferred Banquet or high-volume events production experience. Opening team experience. Culinary degree or equivalent formal training. Working Conditions Extended periods of standing and moving throughout the kitchen and venue. Must be able to lift up to 50 pounds. Exposure to heat, cold storage, sharp equipment, and commercial kitchen environments. Nights, weekends, and holidays required.
