The ideal candidate will play a crucial role in supporting the Executive Chef in managing kitchen operations, ensuring the highest standards of food quality, and maintaining a positive work environment. This position is perfect for individuals who thrive in a fast-paced, fine dining atmosphere and have a strong background in food service and culinary arts. Acts as the Executive Chef in her/her absence.
ESSENTIAL DUTIES AND RESPONSIBILITIES 1.
Oversee food preparation and cooking in all production areas. 2. Completes a variety of food preparation tasks supporting meal service and prep for upcoming meal periods. 3. Leads and directs in the setting and stocking of cook's line with food, supplies, utensils prior to service and restock for next shift. 4. Follows established portion sizes and plating standards when working on the line and prep areas. Ensure that cooks are trained and execute the same. 5. Places food orders as assigned following par levels and guidelines for delivery days. Works with the chef to ensure budgeted spending is adhered to. 6. Drives production of cooks, and delegates work daily to be as close to service as possible to preserve the integrity of the menu items and quality. Ensure recipes are followed. 7. Responsible for ensuring all prepped or left-over food is properly labeled and dated and stored properly. 8. Follows and teaches safe procedures when using knives and other kitchen equipment. Reports any equipment concerns to the chef. 9. Taking charge of kitchen opening, closing and other side work as assigned by the chef. 10. Maintains a strict "clean as you go" policy maintaining a clean and professional working environment. 11. Participates in and assigns cleaning assignments following department procedures. Maintains general sanitation in the kitchen throughout the day. 12. Ensures all record keeping including food temperatures, cooler and freezer temperatures are complete. 13. Responsible for developing key talent and providing coaching when needed. Assists with developing performance review 14. Participates in hiring, coaching and firing employees as needed. 15. Communicates effectively and professionally with front of house staff related to all manners of food and production related to services to residents, guests and staff. 16. Coordinates staff schedules, plans, and participates in cook training under the direction of the chef. 17. Performs other duties as assigned.
PHYSICAL REQUIREMENTS
Capable of lifting up to twenty-five pounds or more. Capable of standing and maneuvering independently and safely around work area. Capable of standing on a tile floor for an eight-hour shift. Ability to see and hear, or to use prosthetics that will enable these senses to function adequately to assure that the position requirements can be fully met. Sufficient manual dexterity to operate a fire extinguisher and to manipulate kitchen equipment, including slicer, food processor, knives, etc.
PERSONAL REQUIREMENTS
Ability to read, writes, speak and understand English. Ability to use simple math concepts. Good communication skills. Sound mental and physical health. Ability to get along well with others, to demonstrate a high level of sensitivity and interest in people, especially older adults.
EDUCATION
High School education preferred.
EXPERIENCE 6-10
years experience required as a Sous Chef.
