Job Description
Nonesuch River Brewing is a craft brewery and full-service restaurant group with two locations in Maine
- our flagship brewery and restaurant in Scarborough and a lakeside location on Middle Range Pond in Poland. Since opening in 2017 we have built our reputation on handcrafted beer, scratch-made food, and genuine hospitality in a casual, welcoming environment. We take what we do seriously without taking ourselves too seriously
- and we are looking for a chef who leads with that same energy.
THE ROLE
================================================================ We are looking for an experienced Head Chef to take full ownership of kitchen operations at our Scarborough location. This is a leadership position in every sense- you will be responsible for the culture, the craft, and the day-to-day execution of everything that comes out of our kitchen.
WHAT YOU WILL BE RESPONSIBLE FOR
================================================================- Leading, coaching, and developing your kitchen team
- line cooks, prep cooks, and sous chefs
- building a culture of accountability, pride, and continuous improvement
- Creating and executing daily specials, whether that means bringing in something new and seasonal or making the most of what is on hand
- then building the recipe, designing the plate, and training the team to execute it consistently
- Driving seasonal menu changes 4-5 times per year, incorporating successful specials and fresh ideas that reflect the season and our local sourcing relationships
- Collaborating with our brewery team on beer-pairing menus, tap room specials, and creative crossover opportunities
- Managing our events and catering program
- rehearsal dinners, weddings, baby showers, corporate meetings
- with the same care and quality as our regular service
- Overseeing ordering, inventory, and food cost management, and developing your team to understand and own these systems alongside you
- Maintaining the highest standards of food safety, sanitation, and kitchen organization
- Partnering with ownership and front-of-house leadership to ensure a seamless, elevated guest experience ================================================================
WHAT WE ARE LOOKING FOR
================================================================- 5+ years of culinary leadership experience, with a proven track record running a full-service kitchen
- A hands-on leader who is as comfortable working the line as managing the team
- Strong creative instincts with the ability to develop and execute original dishes and seasonal menus
- Solid operational fundamentals
- food costing, inventory management, scheduling, and labor management
- Experience with events and catering is a strong plus
- Familiarity with or enthusiasm for craft beer and beer-pairing menus is a bonus
- ServSafe certification required or ability to obtain prior to start date
- A collaborative, positive attitude and genuine passion for hospitality ================================================================
