Job Description
Pneuma | Westwood, New Jersey Full-Time & Part-Time Positions Available Pneuma is an all-day café, restaurant, and market opening in Westwood, New Jersey. We are looking for an experienced, passionate Pizza Chef / Pizzaiolo to join our opening kitchen team and help lead our pizza program. Our pizza program will focus on Roman-style pizza and New York-style pizza , with an emphasis on high-quality flour, long fermentation, excellent ingredients, and consistent execution. The Role The Pizza Chef will be responsible for executing Pneuma's pizza program from dough through finished product. This includes managing fermentation, stretching and shaping dough, preparing toppings, operating our pizza ovens, executing pizzas during service, and maintaining consistent quality throughout the day. We are looking for someone who understands that great pizza starts well before it goes into the oven. Responsibilities Prepare and execute pizzas according to Pneuma's recipes and standards. Mix, portion, ball, and manage pizza dough as needed. Monitor dough temperature, fermentation, proofing, and overall dough quality. Stretch and shape dough consistently. Prepare and maintain sauces, cheeses, toppings, and other pizza station ingredients. Operate and manage commercial pizza ovens. Monitor oven temperature and adjust baking times as necessary throughout service. Maintain proper station pars and communicate production needs. Execute pizzas quickly and consistently during high-volume service. Maintain excellent standards for appearance, texture, bake, and overall quality. Minimize waste and properly manage dough and ingredients. Maintain an exceptionally clean and organized pizza station. Follow all food safety and sanitation procedures. Assist with recipe development, testing, and improvement of the pizza program. Train additional cooks on proper dough handling, stretching, topping, and baking techniques. What We're Looking For Professional pizza experience is strongly preferred. Experience with Roman pizza, pizza al taglio, pizza alla pala, New York-style pizza, high-hydration dough, sourdough, preferments, and long fermentation is especially valuable. Most importantly, we're looking for someone who: Is passionate about pizza and dough. Understands fermentation and how dough changes from day to day. Has excellent dough-handling and shaping skills. Understands how to manage an oven during high-volume service. Works cleanly, quickly, and efficiently. Has strong attention to detail and consistency. Takes pride in every pizza they send out. Is dependable and works well as part of a team. Is interested in continuing to learn and improve their craft. Can help establish and maintain a high standard for Pneuma's pizza program. What You Can Expect Pizza will be a major part of Pneuma's food program, and this position will have the opportunity to be involved in building the program from the beginning. We are investing in high-quality ingredients, long-fermented dough, and professional pizza equipment to create a serious pizza program within a larger restaurant and market. For the right candidate, there will be an opportunity to take significant ownership of the program and grow into a Lead Pizzaiolo or Pizza Chef leadership role as Pneuma grows.
